Dapur Sainer’s Story:
My name is Adilah Ahmad-Sainer. I love spicy food and I must confess that I am a chilli addict. I’m married with 2 children (5 years old boy and 2 years old girl). My husband who is a German loves spicy food too. I even cooked cheesy scramble eggs with chilli padi for our breakfast. Not to forget all other western food that I cooked with Chilli padi be it a pasta, steak sauce

or even a simple salad will still have some chilli padi in it. Besides being a Chilli Addicts, I’m also an avid lovers/cook of a simple and quick western food like Italian, French, German and of course our local food especially Kelantanese dishes. Having travelled the world and stayed in the UK and Italy has given me the experience to cook western food in a simple and fast manner without compromising the taste. A working mother with no maid has made me chose what is more practical when comes to kitchen activities. Italian food has always been the first choice to cook when I was is in a hurry or to prepare for a party. This is due to its simplicity of western cooking process. I always believed that women should only spend maximum of 30mins or less in the kitchen even when we cook local food eg. Malay food (as Malay food takes longer time to prepare). The idea of Dapur Sainer came about was after I gave birth to my first baby in 2009, where I had to tone down all the spiciness in all of my cooking. At that time I was working a 9-5 job or sometimes even stayed back at the office until late. I would also spend one and half an hour in a traffic jam to go back and fro. By the time I got back home it will be too late to cook dinner what more to peel onions, chillies, sambal or chilli paste on the side. Since I don’t have a maid and I had to do all the cooking for the family, I was looking for a solution to make an instant ready to use chilli paste to eat on the side so that I can enjoy my spicy food again as well as cooking a meal that my whole family can enjoy and to cook something delicious, fast and easy. I have also tried to look for suitable and real chilli oil in the market but to no avail. So with a mission, on one weekend I started to cook, modify, invented my own chilli oils where the original recipe was from my mother, where it can last for a very long period of time just for my own usage until one day in December 2013 when I decided to serve my guests with it. They loved it and requested me to make for them too. Hence, the birth of DAPUR SAINER with its first 2 versatile Gourmet chilli oils flavour – Gourmet Chilli Oil – Not So Spicy- and Gourmet Chilli Padi Oil – Quiet Spicy, and then the Gourmet Pickled Habanero Chillies-So Spicy-
Besides western food, as I mentioned above I love our local food very much too especially the Kelantanese dishes. Whenever time permits, I’d cooked my favourite malay dishes and without fail would prepare on the side the Sambal Belacan and my favourite ulam which is Petai. I find it quite tedious if every time I have to pound the sambal belacan. And as for the petai, if I buy fresh it won’t last for a very long time due to the quantity which is a lot for me, because I’m the only one who eats the petai in the house. It was always being left rotten. So I wanted to preserve it and one day I started to pickle the fresh petai by using my own concoction on how to make pickled. After a few trials and error to ensure that the petai stays crunchy and bitey, I came out with the Gourmet Pickled Petai & Chillies – Not So Spicy- to be added to Dapur Sainer’s range of product. The response and feedback receives was unbelievable, as I really didn’t think that many people will like the pickled petai. It was a hit when I first launched it. At the same time I went to search for the readymade sambal belacan that taste like the real homemade in the supermarket, but I could not find the taste that I was looking for. For that reason, I have created my own sambal belacan which is fruity, spicy and not only can last for a very long time but at the same time taste delicious too. It is as good as the freshly made ones. Hence, the fifth type was added to Dapur Sainer’s product and I call my version of Sambal Belacan: the Gourmet Chilli Belacan Oil-Quite Spicy- due the complexity of the preparation and the handpicked high quality ingredients in it. Dapur Sainer has 5 products in the span of 4 months from January 2014 and hundreds bottles sold each month after I’ve started it as a part time passion. Early May 2014, I left my full time job as a General Manager with a luxury brands house to pursue seriously DAPUR SAINER after an overwhelming response and continues orders receives. MEDIA COVERAGE:
1. 20th May 2014- Dapur Sainer went on air was interviewed by Freda Liu on BFM 89.9 the radio business station for their Open for Business- Ala Carte Tuesday Program
2. 29th June 2014 – Dapur Sainer was featured cooking 3 recipes using the 3 Gourmet Chilli Oils on NONA TV3
3. 7th July 2014- Dapur Sainer was on air on BFM 89.9 for Up the Ante program.

One of my sweet memories since venturing into this business was showcasing idea of cooking dishes that my lovely customers can whip up with the help of Dapur Sainer. Here in the video I cooked my first version of "Fusion Black Ink Squid Pasta" for InspiRasa ( an online Tv program for Malay viewers in Singapore) back in 2015. I have no idea that this special dish cooked with its "secret sauce" from Dapur Sainer will become a hit when I first introduced it at @theartisanfoodtrail. So if you guys are curious and adventurest enough do dropby at the restaurant to try it yourself. The dish comes in 3 level of spiciness -1. not spicy ( chilli kering oil) -2. quite spicy (chilli padi oil) 3. Fiery HOT sauce ( a mix of Chilli Kering Oil + Chilli Padi Oil + Chilli Belacan Oil ). HOT&EASY Recipe for today - FIERY HOT ANCHOVIES. Very addictive dish! We highly recommended! A must try recipe especially if you have bought our three types of Chilli Oil. The ingredients: 1. 500g peeled anchovies 2. 1 yellow onion 3. Cooking oil 4. 1 tablespoon each of Gourmet Chilli Kering Oil/Chilli Padi Oil/Chilli Belacan Oil. The method : Heat up cooking oil in a pan, add on the anchovies. Fry them until it turns golden and crunchy. Once cook set a side in a strainer and drain the excess oil. In the meantime, remove excess oil from the pan, leave just about 1 tablespoon. Re heat the same pan with balance of the oil and cook the onions until it turns slight brown. On low heat, add on 3 types of chilli oils from Dapur Sainer. Stir evenly, you may add dry tamarind, salt and sugar to taste. Lastly add the anchovies and stir thoroughly. Your HOT nibbles is ready to be served. The best with nasi panas panas too😆😆 🌶🌶🌶😘

HOT & Easy Recipe for today: - Pekasam Ikan Loma Chilli Padi Oil- Lama dah tak makan ikan ni so recently I got so excited when I saw, it was sold during @foodiesfest. So I quickly got my hands on this special fermented Loma fish. Normally in terms of how to cook it, like anybody else I'd just fry it and eat it with piping hot rice. However, today I did some experimenting .. I cooked it with 1 tablespoon of Chilli Padi Oil, chopped onions ( 20g), daun kesum/Vietnamese coriander(5g), English parsley(1g) and calamansi lime(1). You could see the method on the video. The result is spicylicious of course. The dish has a mix of roast sourish fish taste with nutty, tangy and spicy wrap around it. It was indeed one hell of a mouthwatering dish. This is some part of the HOT scene taken during the Man Vs Food Chilli Addict Challenge at @foodiesfest on 2nd April 2016. The challenge was between Man against the fiery Gourmet Chilli Padi Oil from Dapur Sainer. There were 10 people took part in the challenge. The participants were required to finish up breads which was spread with Chilli Padi Oil. Drinking during the contest was not allowed and they must finish what's on their plate, chew and swallow until nothing is left in their mouth. Some were shaking their head and some surrendered after one bite. Anyway, the winner went to Mr. Aziman who managed to do the HOT challenge in a very "cool" style and won himself the cash prize from the organizer. Congratulations again 👏👏👏👏👏👏. Ps.
