Menu planning shouldn’t be reactive,
it should be structured and planned well in advance.

Using seasonal produce & engaging key food suppliers to ensure great margins.

You’ll have your crowd favorites, some fresh new season items and one or two “hero dishes” that set you apart from the rest.

Menu planning & implementation is something we regularly work on with our clients. We also enjoy the research that goes into menu development 😉

For the past year here at Tabletalks we’ve been talking about splitting our services.
We’ve been operating this way for a while but our customer face didn’t reflect that so the time felt right to introduce studio_recess_ and bring TableTalks back to its roots in Hospitality Development.

Studio Recess will be all aspects of design for our projects in Hospitality, Residential & Commercial spaces
&
Tabletalks will continue to consult in all aspects of Hospitality Development & Operations.

One of my favorite projects to date! Because it has so much history for Craig & I.

This site was a cafe started by our good friends many many years ago, and an iconic Hamilton cafe of its time!

Then we bought it and added it to our boutique cafe group Momento (many) years ago.

It was then sold a couple of times and had become very tired looking until the new owner decided to bring us back and redesign it - breathing new life into this beautiful site!

A fresh new concept, fresh new look and loads of happy people (customers, friends & local businesses) who have great memories of this site through the years!

We recently renovated the building our offices are in.

The exterior was stripped of all sign boards and building details highlighted through a more striking, modern colour palette.

A metal screen feature was also added around the lower platform in order to hide aircon units and reduce the build up of rubbish around the building.

We’re pretty happy with the result!

Bunker Cafe 2020

Built on lake Te Koo Utu in Cambridge we took our theme from the hidden fuel bunker that was buried in the area in WW II.
Brutalist, army bunker interior detailing was used throughout.
We placed 2 internal pods within the space housing the kitchen and the toilets and clad these to look like exterior bunkers.

Sentinel Outpost

A foyer style cafe in the new Union Square Hamilton and a satellite site for the main Sentinel cafe.

The brief was to keep the styling linked to the existing site but give the new site its own personality and create an easy pick and go cafe that has easy flow for customers moving through the foyer.

Deep blues, rich browns and brass were brought through from Sentinel Cafe and mixed with features of the new foyer - warm timber accents and fluted panelling.
While the seating wraps around the curvy walls, mimicking the shape of the Waikato River and creating private pockets for people to dine, meet or catch a few quiet minutes alone.

Chairs...
I can't go past a unique chair, whether it be an arm chair, occasional chair or dining chair they can often be an almost art-like addition to your space.

The one that's got my attention at the moment is the 'Roly Poly' chair by British designer Faye Toogood.

People either love it or hate it but we think it ticks all the boxes...
interesting, unique, comfy & a sculptural statement for your home!
