“Experimentation is at the heart of MIL,” explained Gaby our Travel Designer who recently visited. “They showed us all of the different tests and concoctions they are working on, combining lots of different local ingredients. Not all of them end up being used in the restaurant and so they put them on display to tell visitors about the process of their work.”
MIL offers a one-of-a-kind tasting menu of 8 courses whereby each dish represents the 8 different ecosystems found at the restaurant’s high altitude of 3,600 m / 11,800 ft - an extraordinary concept that pushes the boundaries of Peruvian cuisine - whilst at the same time totally honouring its authentic traditions.
“On the table, the corns and other maize are used to explain the specific origin of the indigenous produce and how it is used at MIL to make their sublime creations. It serves as a fantastic introduction to what our clients will taste later in the experience, since they know it’s history and context.”

Deep in the Andes, clinging to the cliffs of Antanuca Mountain, this luxury hotel is a staggering feat of engineering at 3,300 meters (10,800 feet) above sea level.
Guests undertake a 30-minute hike across the mountain to reach their sleeping quarters along with the property’s restaurant - where cleverly constructed glass domes offer sweeping vistas of the magnificent Nev Veronica mountain.

Enter the sleepy colonial town of Mompox, found several hours from Cartegena, Colombia, on an island enveloped by a wide stretch of the Magdalena River.
Despite becoming a World Heritage site in 1995, this hidden gem is omitted Colombia’s most popular routes - part of the reason we added it to our Hotlist for 2024.
As well as its beauty, magnificent colonial churches, and colorful mansions, what draws our attention is an authentic homestay in the oldest house in the town. It’s the owner herself, seen here - who receives each guest, welcoming them to her chamring home, where authentic homecooked food is served at every meal.
