FROM THE ARCHIVES // With a few new faces on our Socials, we wanted to retell the story of Aracari as we approach our 28th (!) birthday next month.
In 1996, Marisol Mosquera founded Aracari as the first travel company to offer sustainable, luxury travel experiences in Peru, Bolivia, Ecuador, and The Galapagos. "It is fun to think that I had no idea what I was doing when I started Aracari," says Marisol, "I just loved exploring and I wanted to work in an industry where the line between work and play faded, to have a sense of purpose and dance to the beat of my own drum."
Fast forward almost 28 years and we are still proud to call ourselves pioneers, an ethos that runs through everything we do. As summer rolls into fall in the Northern Hemisphere, a precious window of opportunity arises in South America.
From Lima to Buenos Aries, bars and restaurants spill into the streets on balmy nights, and boutiques and ateliers open well into the evening. On the continent's best beaches, parasols bloom and vendors stride the sand with freshly ripened fruit. What do we mean when we say we travel deeper? // We mean taking you to the source, introducing you to pioneers like Manuel - whose meticulous farming methods have produced over 380 varieties of native potatoes, putting them on the menus of Lima’s most renowned culinary institutions: Central and Maido.
High in the Andes, hear how Manuel's intricate process involves removing the pollen from one potato flower and sprinkling it onto a flower of another variety. Achieving tubers in hues of blue, purple, and red while at the same time, enhancing the nutritional properties, textures, and flavors.

These photos were taken last week while at XTANT - where we hosted a round table, with Nilda speaking from Chinchero and Flora there at the festival in Majorca. The sisters detailed many of the fascinating projects undertaken by the CTTC – including their most important project, which will hopefully never be finished: their youth group.
The CTTC is crucial to ensuring that the traditional weaving of Inca and pre-Inca cultures is continued. A craft that requires unimaginable bounds of patience might not seem like a natural fit for a generation born into technology, but the CTTC has helped contextualize how essential it is to prepare the master weavers of the future.
Together we explained how the right kind of tourism is also essential to nurturing and preserving ancient techniques and artistic traditions, because without buyers who appreciate their talent – there is no market and therefore no livelihood.

Because whilst we have been curating extraordinary adventures to this part of Peru for almost three decades, when we heard local authorities have expanded pathways here to give visitors wider access to the spectacular Inca ruin - we wanted experience the impact of the changes for ourselves so that we can make any necessary adaptations to our clients trips here. Found above the ancient circular Inca terraces of Moray in the Sacred Valley, MIL Centro is brainchild of Virgilio Martinez - the culinary mastermind behind Lima’s Central Restaurant - ranked No.1 in the world by the @theworlds50best in 2023. “Experimentation is at the heart of MIL,” explained Gaby our Travel Designer who recently visited. “They showed us all of the different tests and concoctions they are working on, combining lots of different local ingredients. Not all of them end up being used in the restaurant and so they put them on display to tell visitors about the process of their work.” MIL offers a one-of-a-kind tasting menu of 8 courses whereby each dish represents the 8 different ecosystems found at the restaurant’s high altitude of 3,600 m / 11,800 ft - an extraordinary concept that pushes the boundaries of Peruvian cuisine - whilst at the same time totally honouring its authentic traditions. “On the table, the corns and other maize are used to explain the specific origin of the indigenous produce and how it is used at MIL to make their sublime creations. Deep in the Andes, clinging to the cliffs of Antanuca Mountain, this luxury hotel is a staggering feat of engineering at 3,300 meters (10,800 feet) above sea level. Enter the sleepy colonial town of Mompox, found several hours from Cartegena, Colombia, on an island enveloped by a wide stretch of the Magdalena River. Despite becoming a World Heritage site in 1995, this hidden gem is omitted Colombia’s most popular routes - part of the reason we added it to our Hotlist for 2024. As well as its beauty, magnificent colonial churches, and colorful mansions, what draws our attention is an authentic homestay in the oldest house in the town.
