DEEPER AND DIFFERENT // It’s no secret that Peru’s food is renowned the world over, but so often - travelers taste only the end product, the refined and final dish. ‌ What of the produce provenance? A story that starts in the soil. ‌ Turning our attention to a brand new experience in Barranco, Lima, this week @juanjosevp82 discovered a decade-long research project around cacao and other native Theobromas of the Peruvian Amazon, witnessing a process that spans from bean to bar, with several moments to sample the science too. 🍫
