Ingredients:
-4 pieces of cured meat
-4 green plantains
-250 g of chorizo
-120 g of lard
-Vegetable oil
-Salt to taste
Preparation:
-Let's start this recipe by peeling the green plantains and then cutting them into slices one centimeter thick.
-In a frying pan, heat a good amount of oil.
-Once the oil is very hot, place the plantain slices in the pan and lower the heat to medium-low.
-When they are golden on both sides and well cooked, carefully remove them from the pan. Place them on an absorbent towel to remove excess oil.
-Place the plantains in a mortar or sturdy container and mash them with a fork or mallet.
-Once they are mashed, add the lard and salt to taste.
-Stir the mixture with your hands, make sure they are clean.
-When you have incorporated all the ingredients well, make some medium-sized balls with the plantain mixture and set aside.
-It's time to cook the jerky, add a little salt. Then heat a splash of oil in a frying pan and then fry the piece on both sides until it reaches the exact cooking point, according to your criteria
- Now it is time to cook the chorizo, you can do it in the same pan after cooking the cecina, if it needs more oil, add it.
- When everything is well cooked, serve. First place the plantain balls and to one side the chorizo and the piece of cecina.
