I call it The Peruvian Shepherd's Pie..
A colorful layered cake consisting of juicy chicken or tuna salad, marinated in mayonnaise and avocado, which is gently placed between two layers of mashed potatoes made from local potatoes (one of the 3578 types that exist here). The dish is served garnished with Platano chips and Ahi sauce - The famous spicy local salsa. The only problem with this dish is that it is so beautiful that it somtime hurts to eat it...nontheless...!!!

Picrons is a Peruvian doughnut made from spuash and sweet potato, deep-fried and then drenched in syrup that resembles a cross between maple and honey - this is a local sin not to be missed. Of course, every sin has a price, but it is undoubtedly a price worth paying, although I would not be tempted by two dishes, speaking from experience

when we first moved to the Sacread Valley of Perú my husband was really depressed..." Im an architect" he said, "how could you have brought me to a place that has no pavements..."
But then he tasted the Rocoto Rellenó, a fried hot peper stuffed with some vegetables and meet, and decided that we can try and stay for a little longer..:)

Aji amarillo...the playful and spicy little pepper that the locals use to upgrade almost any dish...mixed with chopped green tomatoes & onions and sometimes even with a surprising base of peanut butter, the salsas that the abuelas make from it makes any dish taste like a Peruvian one. make sure you have a glasé of Water and some bread near by when you try it...you might need it...
