Grilled Cheese Sandwich ala Alice Waters. Chef Alice of Chez Panisse described her method of grilling cheese sandwich in her book “ Coming To My Senses” which I am reading now. So the following morning, I grilled cheese sandwiches for breakfast. Soooooo good.
This is done in a cast iron pan doused with
olive oil. This is then weighed down to press the bread firmly. I used a pan topped with canned soup as weights.
Mama loved it.

Banish the almires.
Mama is uber-strict about Mongo Soup preparation. She insists on having a bowl of shrimp
heads pounded on the almires to use in the soup.
The flavor of the soup has to be shrimp-rich.
But it is hard labor- literally.

Tonight, I banished the almires, yet achieved the same flavorful soup. How?

I boiled the shrimp heads in water. When the boiling broth turned orange, the broth was poured into the boiling mongo.

So, instead of using the almires, I used different pots to cook the ingredients separately. The sauteeing of the other ingredients was also done separately. Ultimately, they were all simmered together.

The result was a very flavorful mongo soup.
Mama approved!

Welcome Home Boodle Lunch
How do you properly welcome home a sister who finally managed to come home this Christmas?
Well, give her a boodle lunch.

This is how I pulled it off.
Not quite all mixed up.

We used bilao as plates. But lined these, as well as the table, with banana leaves. All these were sanitized with food grade homemade sanitizer ( hydrogen peroxide solution).

Then the food was arranged around the table consisting of lechon, Kinilaw, Pako Salad, Crabs and Shrimps. As side dishes, we had corn and boiled banana.

For dessert, we kept it simple with fresh buko spiked with ube liqueur and fresh durian.

soooo good.
