HAPPENING NOW Community Based Tourism Culinary Workshop
The Provincial Government of Northern Samar through the Provincial Tourism Office will be conducting a 3-day Community Based Tourism Culinary Workshop from August 7-9, 2024 for community members to enable them to professionally prepare and handle food and contribute to capability building initiatives and spread the benefit of tourism level. Also to showcase Filipino cuisine and local dishes, to learn basic food handling techniques, gain knowledge and how to manage and conduct business in catering related operations.
A total of 35 participants from the Pacific towns of Lapinig, Gamay, Mapanas and Palapag have the best opportunity to learn from an expert chef in the person of Mr. Mark Reynan Campado Sabayan, MM, CGSP, CHMP and a DOT Accredited Tourism Culinary Trainer.
According to Mr. Sabayan, Culinary tourism and gastronomics go hand in hand, as they both seek to explore and celebrate the diversity of food cultures around the world. By participating in culinary tourism, travelers cannot only taste delicious dishes, but also learn about the stories and traditions behind them, and gain a deeper appreciation for the culinary heritage of a place.
He emphasized during the first session on the importance of basic food safety to prevent food contamination concerns that can cause health issues.
On the second day, the topic will deal with Basic Culinary Mathematics (Recipe Calculation and Calculating Costs and Menu Pricing). The last day of the training will focus on Basic Cooking Methodologies. Participants are expected afterwards to prepare at least 3 different local heritage dishes.
Ms. Brenda Morales, Tourism Officer II greeted all attendees, while Chief Tourism Operations Officer Ms. Ma. Josette G. Doctor delivered a message of encouragement, urging participants to actively engage in the 3-day training. Ms. Jhonna Troncoso acted as facilitator and emcee for the event.
