Puerto Rico Needs our help! (CNN) Thursday marks three weeks to the day since Hurricane Maria leveled Puerto Rico.
Since then, the island's 3.4 million American citizens have been plagued with power outages and a dangerous shortage of drinking water. More than a hundred people remain unaccounted for. Animal corpses rot in stagnant water, inviting infection and disease.
Over all of it, the shadow of debt looms. The estimated cost of Maria's damage is $95 billion -- almost an entire year's economic output for the island. Please! A fun day adventure outside of Rincon is Crash Boat Beach! Probably one of my favorite swimming beaches, at times it can be great for a paddle, or go on a diving adventure here. You can watch the local fishermen literally crash their boats onto the beach while eating a delicious grilled pincho and sipping on a coconut. Crash Boat is where it is at! It can be busy on the weekends, so if you want to miss the crowds, go during the week! 🌊🚤🏖

Over the weekend we catered a Taco 🌮Party for 20 people on vacation. We served delicious grilled whole Fish, Slow Cooked Chicken over coals (Carbon Style) and Charred Vegetable Tacos. On the side they enjoyed Banana Escabeche, Tomato 🍅 & Cucumber 🥒 Salsa, Pickled Red Onion, Raw Zucchini and Cilantro Salad, Jalapeños & Limes, Warm Tortillas, Habanero/Carrot Hot Sauce and last but not least Rice and Beans! Bringing people together around a table of food starts with the right menu for that group. We ended the taco feast with Dessert, homemade Coconut 🌴Ice Cream Milkshakes infused with Rum!

"A Passion for Tarpon" TARPON are a silver-colored, saltwater game fish that can reach up to 300lbs. I have had many a frustrating day fly fishing for tarpon. You see them rolling, you see them wake. You get so excited. You are waiting, anticipating. You see them coming and coming and then it's up to you to put that fly in the perfect spot in front of their face. You watch what the fish is doing and he/she is telling you what to do with the fly and then there is that moment where either the fish takes the fly or swims away because what you did was not good enough or what you did was spot on. Tarpon demand perfection. If the tarpon takes the fly you set the hook and then, that fish gives you the best feeling and the biggest rush ever. You dance with that tarpon depending on their size for 20 minutes to way over an hour. Your arms and hands feel like they might fall off and you are not sure if you can finish the job. Your guide is keeping you calm with tough love and not letting you give up the chance to bring in the Silver King. I love tarpon fishing and I can't get enough. Until next time...
