Simple, colorful and veeeeeery tasty, this seasonal snack is for everyone and even meets the requirements of the period – the religious fasting before Easter. If you add the vitamins intake and the delicious taste you realize why the people of the traditional Romanian village always have “zacusca” [zaˈkuskə] in the storeroom. The recipe contains a few basic ingredients: roasted eggplant, sauteed onions, tomatoes and / or tomato paste, oil and paprika pepper. You can add mushrooms, carrots or even beans, and if you want to be inventive, you can combine them. Of course, spices such as bay leaves and salt give the final aroma.
The large quantity in which this appetizer is prepared in the autumn ensures a good snack for the family during the cold months. “Zacusca” is kept very well in tightly sealed jars, but should be consumed within a few days of opening. So, good appetite!
