Over the years, through extensive travel, sampling and brewing. We’ve come to conclude that in and of themselves organic hops, organic malt and organic yeast are superior in taste to their non-organic equivalents. In short, they are insanely delicious.

PIM is that ale. Brewed according to a recipe that we’ve honed a thousand times but with a small mountain of select organic Yakima Chief Citra, organic malt, organic wheat, organic oats and organic yeast.

This Wednesday (5/6): Come celebrate the very special launch of ”Blacker Chocolate Stout”, a collaboration between Omnipollo and Brooklyn Brewery that re-imagines the iconic ”Brooklyn Black Chocolate Stout” by utilising the ancient West African grain fonio! Brewmaster Garrett Oliver will be joining forces with us at Omnipollo’s Church to serve up the first cans of beer supported by the sonic sounds of DJ duo Bayo’s, alongside an array of flavours lovingly prepared by Chef Coura Mbaye. Artwork by Karl Grandin will also be shown during the evening, alongside artworks from Brooklyn Brewery’s archive with early Milton Glaser drawings. Spots are sure to be as limited as the beer and merchandise available, so set your watches (if anyone still uses those) to join us all on June 5th at 4pm and we’ll see you then !

Hill Farmstead 𝗪𝗼𝗿𝗸𝘀 𝗼𝗳 𝗟𝗼𝘃𝗲: 𝗢𝗺𝗻𝗶𝗽𝗼𝗹𝗹𝗼.

In early April of 2022, I traveled to Vermont to spend some time with Shaun with the aim of creating a truly collaborative creation in the spirit of our Works of Love series, one that embraced and highlighted the ethos of each brewery.

This Works of Love was crafted from a fully organic base of malted barley, oats, raw wheat, spelt, and corn, as well as organic hops, which was then primary fermented in oak puncheons. Following fermentation, the base beer was aged on lees for nine months and then conditioned with wild Maine blueberries and organic vanilla beans, creating a singular expression of each brewery’s vision.
