Ingredients:

(A) Fruity Base
• 1000g Mixed Fruit
• 50g Rum Compound (or substitute with orange juice for an alcohol-free option)

(B) Creamy Mix
• 500g Unsalted Butter
• 360g Molasses Sugar
• 2 tbsp Fruit Paste

(C) Eggs
• 10 Fresh Eggs

(D) Dry Ingredients
• 450g Super Fine Flour
• 1/2 tsp Baking Powder
• 1/2 tsp Baking Soda
• 1 tbsp Allspice
• 1 tsp Cinnamon Powder
• 1/2 tsp Baking Salt
• 100g Chopped Walnuts

Method:
1️⃣ Beat (B) until light and creamy.
2️⃣ Add (C) eggs one at a time, mixing well.
3️⃣ Fold in (D) dry ingredients gently.
4️⃣ Finally, add (A) fruity base until well combined.
5️⃣ Pour batter into lined baking tin(s): 4 pieces of 9”x3”x3” or 1 round 9”x3” pan.
6️⃣ Bake at 170°C for 60 minutes.
