When I was a little girl, our Nonica, the grand mother, would often call me to help her in the kitchen. I always admired her skills. I was amazed at how she could hold a hot potato and peel it without flinching. "There's no time to fuss in the kitchen," she would say to me every time. Even if it stings a bit, it doesn't matter. "When making potato dough, time is crucial, or it will turn mushy," she added. "Hot potatoes are easier to peel, and you won’t get lumps when you press them through the sieve."
She added a few pinches of salt, a generous piece of butter, flour, and eggs. "Now, you make the dough. Roll up your sleeves and get to work." And that was it. We cut the large lump of potato dough into equal parts, shaping them into long snakes to make gnocchi, dumplings, or croquettes.
