The perfect fall muffin 🍁🍂

Low-fat Pumpkin Spice Walnut Streusel Muffins

INGREDIENTS
Muffins
3/4 cup Manischewitz Vegetable Broth
1 cup white all purpose flour
1 cup whole wheat flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon ground allspice
1/4 teaspoon Manischewitz Kosher Salt
1/4 cup packed light brown sugar
1/3 cup pumpkin puree
3 large eggs
1/4 teaspoon pure vanilla extract

Streusel
1/2 cup All Purpose Flour
1/2 cup packed light brown sugar
1/2 teaspoon ground allspice
1/2 teaspoon cinnamon
1/2 cup walnuts
5 tablespoons cold margarine (cut into small bits)

DIRECTIONS
1. In a large bowl, whisk together both flours, sugar, baking powder, and allspice. Stir in the brown sugar and blend well.
2.In a separate bowl, mix together the pumpkin puree, eggs, vegetable broth and vanilla extract.
3.Pour the liquid ingredients over the dry ingredients and whisk together quickly until just combined. The batter does not have to be smooth and will be slightly lumpy.
4. Divide the batter evenly between the 12 muffin cups. Generously sprinkle some streusel mix over each muffin top. Press the streusel crumbs into the muffins with the back of a spoon.
5.Bake muffins for 20 minutes or until tops are golden brown. To test if muffins are done, insert a toothpick into the center of a muffin. It should come out clean.
6.Cool on rack for five minutes and serve warm.
7.Preheat oven to 375 degrees Fahrenheit. Use a 12-cup regular muffin pan (if it isn’t a non-stick pan, use paper liners.)
8.Place all the ingredients for the streusel into a food processor and process for one minute until combined. The consistency of this streusel should be pea-sized crumb pieces. In a small bowl, set streusel aside and store in the refrigerator until ready to use.

The not-so-secret ingredient is Manischewitz Vegetable Broth! just got even better.

Vegetable Stuffed Sweet Potato Ravioli

INGREDIENTS

Ravioli Dough
2 1/2 cups unbleached flour + extra for rolling
6 egg yolks
2 tablespoons olive oil
1 tablespoon kosher salt
1 cooked large sweet potato, without skin
Filling
1 tablespoon olive oil
1 medium onion, diced
2 cups frozen spinach, chopped
1 pint sliced mushrooms
1 teaspoon garlic powder
To Cook Ravioli
1-32 ounce container Manischewitz Vegetable Broth
1 cup water

DIRECTIONS

Prepare the Ravioli Dough
1. In a food processor, combine all the dough ingredients. Process for a few quick minutes until dough forms. The dough should not be sticky and should be easily removable from machine. (If it is sticky, add more flour by the tablespoon).
2.Turn dough out onto lightly floured work surface and form an oblong log. Wrap securely in plastic wrap. Let dough rest on work surface at least one hour (up to four hours).
Prepare the Filling
1. In a small frying pan, sauté the onions in olive oil for about six minutes on medium-high heat.
2. Once the onions have started to soften, add spinach and mushrooms. Cook for about five minutes longer, mixing everything together thoroughly.
3. Pour the vegetable mixture into a bowl. Add the garlic powder and combine thoroughly. Set aside.
4. After an hour, unwrap the dough from the plastic wrap and cut into four even portions. Flour work surface and rolling pin. Roll out one portion of dough into a thin nine-inch square. Flour both sides as needed when rolling.
5. Cut out as many squares as you can from the rolled-out dough. Brush a light coating of vegetable broth around the edges.
6. Place one rounded teaspoon of filling in center of one square. Top with a second square of dough and press the edges together to seal tightly. Dust ravioli lightly with flour. Repeat procedure with remaining dough.

To Cook the Ravioli
1. Bring a large saucepan filled with the vegetable broth and water to a rolling boil. Add the raviolis, five to six at a time.
2. Cook each batch for three to four minutes. Serve hot with your favorite melted butter sauce.
