Sometimes ya gotta drop the ball...Vegetable Soup with Matzo BallsINGREDIENTS2 tablespoons olive oil1 medium onion, diced3 cloves garlic, minced2 cups butternut squash, peeled and diced2 carrots, sliced2 celery stalks, sliced2 medium potatoes, diced1 zucchini, diced 4 cups vegetable broth1 teaspoon dried thyme1 teaspoon paprika1 teaspoon garlic powder1/2 teaspoon ground cumin Salt and pepper to taste1 tablespoon lemon juice1 pkg Manischewitz Matzo Balls (frozen)INSTRUCTIONSCombine all ingredients in a pot and bring to a boil. Cook for 1 hour. Add matzo balls and enjoy!

Rosh Hashanah chicken, here we come! Apple Butter ChickenINGREDIENTS8 chicken drumsticks1/2 cup Manischewitz Apple Butter2 tbsp Dijon mustard1 tbsp apple cider vinegar4 tbsp olive oil (divided)2 cloves minced garlic1 tsp smoked paprika1 tsp cinnamon, dividedSalt and pepper, to taste1 medium butternut squash (peeled, seeded, and cubed)1 tbsp maple syrupDIRECTIONSPreheat the oven to 400°F.In a bowl mix together apple butter, Dijon mustard, apple cider vinegar, 2 tbsp olive oil, minced garlic, smoked paprika, 1/2 tsp cinnamon, salt, and pepper.Pour over chicken drumsticks and mix until well coated.In a separate bowl, toss the cubed butternut squash with the remaining 2 tbsp olive oil, 1/2 tsp cinnamon, maple syrup, salt, and pepper.Bake for 30 minutes uncovered, and cover for the remaining 60-90 minutes.

Apple Butter Cookies
INGREDIENTS
2 tablespoons margarine softened
¼ cup Manischewitz Apple Butter
½ cup granulated sugar
1 egg yolk
1 cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon vanilla extract
¼ teaspoon baking soda
For rolling:
¼ cup sugar
½ teaspoon cinnamon
DIRECTIONS:
Using an electric mixer, combine margarine, apple butter and sugar in a bowl.
Add egg yolk and mix well.
Add and combine remaining ingredients.
Refrigerate dough for 30 minutes.
Divide into 10 balls and roll in sugar mixture.
Bake at 375℉ for 14 minutes and cool completely.
