👨🍳Recipe Highlight of The Week: Autumn Kale and Apple Salad with Honey Mustard Vinaigrette
Ingredients:
• 4 cups kale, chopped and massaged
• 1 apple, thinly sliced
• 1/4 cup dried cranberries
• 1/4 cup pumpkin seeds
• 1/4 cup crumbled blue cheese or feta
• Honey Mustard Vinaigrette:
• 2 tablespoons olive oil
• 1 tablespoon apple cider vinegar
• 1 tablespoon honey
• 1 teaspoon Dijon mustard
• Salt and pepper to taste
Instructions:
1. In a large salad bowl, combine chopped kale, sliced apple, dried cranberries, pumpkin seeds, and cheese.
2. In a small bowl, whisk together the vinaigrette ingredients.
3. Drizzle the vinaigrette over the salad and toss to combine.
4. Serve immediately or refrigerate until ready to eat.

Recipe Highlight of The Week: Pumpkin Spiced Smoothie Bowl
Ingredients:
• 1/2 cup canned pumpkin puree
• 1 frozen banana
• 1/2 cup unsweetened almond milk
• 1/4 cup Greek yogurt (optional for creaminess and protein)
• 1 tablespoon almond butter
• 1/2 teaspoon pumpkin pie spice
• 1 tablespoon honey or maple syrup (optional)
• Toppings: granola, pumpkin seeds, sliced banana, or a sprinkle of cinnamon
Instructions:
1. In a blender, combine pumpkin puree, frozen banana, almond milk, Greek yogurt, almond butter, pumpkin pie spice, and sweetener (if using).
2. Blend until smooth and creamy.
3. Pour into a bowl and add your desired toppings before enjoying.

Did know this about the cute little babies?? The last one is our favorite!
🐘 They’re so silly for a reason! Baby elephants do some crazy things with their trunks like sticking them in the mouths of their older relatives! By doing this they sample the food being eaten. They throw objects around for about the first 8 months while they get used to the muscles in the trunks.
🐘 Oh the poor mamas! 😳The gestation period of an elephant is 22 months and they can be born at a whopping 200 lbs!
🐘 It’s there for a reason! Their bodies are covered in hair to help them cool down. The hair reduces over time when their bodies figure it out.
🐘 Motherly love! Babies stay super close to their mothers for the first months and drink from them for two years if not longer.
🐘They self soothe! A young elephant may suck its trunk to help relax them when they’re not eating.

🐘It takes a tribe! If a baby if complaining or whining the entire family will go over to help them.
During our safari is past March in Tanzania we were greeted by this adorable parade of babies with their moms and tribe. It was by far one of the most magnificent and memorable event during our time there. Not to mention the balloon safari or watching wildlife while relaxing in our pool! That feeling that comes over you when you’re life is good and you don’t even know your smiling. The sense of pure joy and living in that very moment of absolute contentment.
What’s your happiness??
In 2009, Michelle became a widow with two very young kids. She turned to exercise as her saving grace and within a year had left her corporate job to become a personal trainer. Michelle believed so strongly in the power of fitness to help transform lives struggling with difficulties. She also sat down just weeks after her late husband's death and vowed to do everything on his bucket list! Each year, on the anniversary of his death, she did something big, and sometimes small, to honor his LIFE, rather than dwell on his death.
When Michelle met and fell in love with Keith, it seemed the two are meant to be. Keith had similarly lost his best friend, and he had also used fitness as a grief tool, and both Michelle and Keith crave adventure. As they say, it was a match made in heaven.
Soon Keith took his exercise science degree and put it to good use as they formed the fitness brand, My1FitLife. The goal of their fitness company is to help people create a fit life so they can do all the things they dream of doing. Their brand is WELLNESS, not fitness, and their team helps people focus on the things that matter. My1FitLife is based on what Michelle and Keith call the 5 Pillars of Wellness.

In 2016, Michelle and Keith also planned their first international adventure trip to Costa Rica and quickly realized that many people want to go live their dreams. Still, sometimes, they need a like-minded community to travel safely.
In 2019, My1FitLife Adventure took hundreds of people all over the world and helped them live dreams, big and small. From hiking volcanoes in Bali, white water rafting in Costa Rica, and pasta making in Italy, we have a trip for every adventure style and wish.
