Delightful Strawberry Shortcake Truffles

Ingredients:

1 box vanilla cake mix (plus ingredients needed to prepare the cake)
1/2 cup strawberry preserves
1/2 cup cream cheese, softened
12 oz white chocolate, chopped
1/2 cup freeze-dried strawberries, crushed
Directions:

Prepare the vanilla cake mix according to the package instructions. Once baked, allow the cake to cool completely.
In a large bowl, crumble the cooled cake into fine crumbs.
Add the strawberry preserves and cream cheese to the cake crumbs. Mix until well combined and a dough forms.
Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 1 hour.
In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring between each interval until smooth.
Dip each truffle into the melted white chocolate, allowing any excess to drip off. Place the truffles back on the parchment-lined baking sheet.
Immediately sprinkle the crushed freeze-dried strawberries on top of each truffle before the chocolate sets.
Refrigerate the truffles for another 30 minutes or until the chocolate is firm.

Savory Baked Caesar Chicken

Ingredients:

4 boneless, skinless chicken breasts
1 cup Caesar dressing
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup breadcrumbs
2 tablespoons fresh parsley, chopped (optional)
Directions:

Preheat oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.
Place the chicken breasts in a single layer in the prepared baking dish.
In a small bowl, mix together the Caesar dressing, Parmesan cheese, garlic powder, and black pepper.
Spread the Caesar dressing mixture evenly over the chicken breasts.
Sprinkle the breadcrumbs over the top of the chicken, pressing lightly to adhere.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the top is golden and crispy.
Garnish with fresh parsley before serving, if desired.

🎃 Pumpkin Chocolate Chip Muffins 🎃

Here’s how to make them:

🍴 Servings: 12 muffins
🕒 Prep Time: 15 minutes
🕖 Cook Time: 20-25 minutes
🕖 Total Time: 40 minutes

Ingredients:
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup canned pumpkin puree
1/2 cup vegetable oil
2 large eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips (plus extra for topping)
Optional: 1/2 cup chopped nuts or dried cranberries
Instructions:
1️⃣ Preheat the Oven:

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
2️⃣ Mix the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
3️⃣ Mix the Wet Ingredients:

In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, eggs, granulated sugar, and vanilla extract until smooth and well combined.
4️⃣ Combine Wet and Dry Ingredients:

Zesty Creamy Lemon Parmesan Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon dried thyme
Fresh parsley, for garnish (optional)
Directions:

Preheat oven to 375°F (190°C).
In a shallow dish, combine flour, garlic powder, onion powder, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off excess.
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 3-4 minutes per side, or until golden brown. Transfer chicken to a plate.
In the same skillet, add chicken broth, heavy cream, Parmesan cheese, lemon juice, lemon zest, and dried thyme. Stir to combine and bring to a simmer.
Return chicken to the skillet, spooning some of the sauce over the top.
