The Neapolis Archeological Park of Siracusa is home to a spectacular 5th century BC Greek Theater – the largest in Sicily – a Roman Amphitheater and the Ear of Dionysus, a large cave with excellent acoustics, it’s worth spending a couple hours marveling at the ancient sites. The INDA Foundation also holds performances of Greek classics in the outdoor theater from May through July each year.

Bobotie is a casserole with curried ground beef at the bottom and a thin layer of egg custard on top. Today many consider Bobotie to be the national dish of South Africa, but its roots in South Africa date back to the 17th century. Dutch traders set up camp in the area that is now Cape Town as a stopping point on their journeys back and forth to Indonesia. The traders brought spices, cooking techniques, and recipes with them. While the specifics are a bit vague, it is thought by some that the original Bobotie recipe came from Indonesia and was adapted to fit the available ingredients.
These are the ingredients for 4 people:
2 slices of bread ( brown or white)
1 1/2 cup milk
2 tablespoon sunflower (or canola) oil
1 tablespoon butter
2 yellow onions, roughly chopped
2 garlic cloves, finely chopped
2 teaspoon curry powder
2 tablespoon fruit chutney
1 tablespoon smooth apricot jam
1 tablespoon Worcester Sauce
1/2 teaspoon ground tumeric
2 tablespoon apple cider (or red wine) vinegar
1 1/2 pound ground beef
4 tablespoon dried raisins
3 eggs
4 bay leaves (use the best quality that you can as bay leaves impact the flavor of this dish most)
Salt and pepper
Preparation time: 30 min
Cooking time: 50 min
You'll need an oven-proof dish and a wide skillet/pan
Oven temperature 350°F
Please note that Worcester Sauce (or Worcestershire sauce) is an important ingredient to this recipe. For those of you who don't know it, Worcester Sauce is an intensely savory British condiment frequently used to augment food and drink recipes. If you cannot find Worcester Sauce at your grocery store you can create a substitute by mixing well until smooth the following ingredients:
1 tablespoon ketchup
1 tablespoon white wine vinegar (or ½ tablespoon white vinegar)
½ tablespoon soy sauce (or tamari or coconut aminos)
