In the process of developing the menu for their first restaurant, The Catfish Place in Marshall,Texas, Pops experimented with a variety of spice combinations to find just the right one to be his signature seasoning. After many trial and error experiences (
and my mom almost going crazy in the process) Pops Signature Seasoning was born, an outstanding blend that adds tremendous flavor to not only catfish, but to almost any dish. Over the next several years the Catfish Place became three family-owned and run restaurants and a very busy catering business. When it came time to retire from the restaurant business, Pops maintained the catering portion of the business for a couple of years. All along Pops Signature Seasoning was the staple ingredient in many menu items. Although separated by many miles, as opportunity allowed, I spent time with my folks in their restaurants and learned that I not only enjoyed it but had a knack for cooking. With five children, my wife and I found that it was almost like serving a small restaurant style buffet each time we prepared a meal for our growing family. The years went by, the kids grew (and began calling me Pops), my first grandchild was born, and more and more of their friends made themselves at home at our house (especially around supper time). I found myself feeding 10-15 people on a regular basis. Then there were company office parties, employee recognition events, and a few catering opportunities of my own that solidified my dream…..to one day have my own catering business that would bring the same magnificent food and exceptional customer service that my Pops did. And so, Pops Cookin’™ was born. It was a no-brainer that I would continue using Pops Signature Seasoning in many of my menu items. As I began to test more and more recipes (using my neighbors and close friends as guinea pigs) I soon came up with so many ways to use this fantastic seasoning blend. In the process, my friends and neighbors kept wanting me to give them the recipe for Pops Signature Seasoning, so I would make up batches and give away, but never gave up the recipe……after all it’s a family secret! So they offered to buy seasoning from me to use and give to their family and friends because it’s like nothing they’ve used before.
