Amache site closer to being part of National Park Service Japanese NPS in Denver

DENVER — Once an incarceration facility for many Japanese Americans, the Amache land in southeast Colorado is now a National Historic Site in the eyes of the U.S. Senate and one step closer to becoming part of the National Park Service.

The Senate on Monday voted unanimously to pass the Amache National Historic Site Act, backed by Colorado Sens. Michael Bennet (D) and John Hickenlooper (D), as well as Colorado Congressmen Joe Neguse (D) and Ken Buck (R). Previously, Sen. Mike Lee (R-Utah) had objected to the designation, saying he opposed putting more land under federal jurisdiction.

Air-Fryer Brats with Beer Gravy Serbe with a brown mustard

1 package uncooked bratwurst links (20 ounces)
2 tablespoons butter
1 medium onion, thinly sliced
2 tablespoons all-purpose flour
1/8 teaspoon dill w**d
1/8 teaspoon pepper
1 bottle (12 ounces) beer or nonalcoholic beer
5 slices thick bread

Preheat air fryer to 400°. Place bratwurst in a single layer in a greased air fryer. Cook until no longer pink, 8-10 minutes.
Meanwhile, in a large saucepan, heat butter over medium-high heat. Add onion; cook and stir until onions start to brown and soften. Add flour, dill w**d and pepper; stir until smooth. Stir in beer. Bring to a boil. Reduce heat; simmer, stirring constantly until thickened, 3-5 minutes. To serve, place 1 brat on each slice of bread; top evenly with onion mixture.

Serve With Easy German Potato Salad
5 pounds potatoes (about 12 medium), peeled
8 bacon strips, cooked and crumbled
1 small onion, chopped
3 green onions, thinly sliced
1-1/2 cups water
1/2 cup white vinegar
1/3 cup canola oil
1-1/4 teaspoons salt
1/2 teaspoon pepper

Place potatoes in a stock pot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 15-20 minutes or until tender. Drain potatoes; cool slightly.
Cut potatoes into slices. Place in a large bowl. Stir in bacon, onion and green onions.
In a small bowl, whisk the remaining ingredients until blended; pour over salad and toss gently to coat. Serve warm. Refrigerate leftovers.

Serve with German Red Cabbage

1 medium onion, halved and sliced
1 medium apple, sliced
1 medium head red cabbage, shredded (about 8 cups)
1/3 cup sugar
1/3 cup white vinegar
3/4 teaspoon salt, optional
1/4 teaspoon pepper

In a large Dutch oven coated with cooking spray, cook and stir onion and apple over medium heat until onion is tender, about 5 minutes. Stir in remaining ingredients; cook, covered, until cabbage is tender, about 1 hour, stirring occasionally. Serve warm or cold.

Air-Fryer Steak Fajitas

2 large tomatoes, seeded and chopped
1/2 cup diced red onion
1/4 cup lime juice
1 jalapeno pepper, seeded and minced
3 tablespoons minced fresh cilantro
2 teaspoons ground cumin, divided
3/4 teaspoon salt, divided
1 beef flank steak (about 1-1/2 pounds)
1 large onion, halved and sliced
6 whole wheat tortillas (8 inches), warmed
Optional: Sliced avocado and lime wedges

Directions
For salsa, place first 5 ingredients in a small bowl; stir in 1 teaspoon cumin and 1/4 teaspoon salt. Let stand until serving.
Preheat air fryer to 400°. Sprinkle steak with the remaining cumin and salt. Place on greased tray in air-fryer basket. Cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 6-8 minutes per side. Remove from basket and let stand 5 minutes.
Meanwhile, place onion on tray in air-fryer basket. Cook until crisp-tender, 2-3 minutes, stirring once. Slice steak thinly across the grain; serve in tortillas with onion and salsa. If desired, serve with avocado and lime wedges.
