While I do love all the specialty milkshakes and desserts, it is possible to eat healthy on a Universal vacation! Here are two delicious and healthy meals I had there recently. The top is Lucy’s Top Secret Salmon from Illumination’s Minions Cafe. It is wood-grilled Atlantic salmon, coconut rice, Thai cucumbers, and edamame. The bottom is the Island Chicken Salad and fresh fruit from Whakawaiwai Eats in Volcano Bay, a perfect water park lunch!

On this last trip to Universal, we went more affordable and stayed at Cabana Bay Beach resort. Missed the ferry boat transportation to City Walk and the parks but love the Garden Walk! It is beautiful, and walking it each day helps you burn off milkshakes and butter beers!
