Mia was one of the first friends of Look Cook and Eat, helping us launch the site and promote it to others with disabilities. She was a force and made an immeasurable difference in this world. I'm proud to have known her and grateful for her contributions to our city, state, country, and world. Today is Mia Peterson Day in Iowa and would have been her 50th birthday.

Gov. Kim Reynolds has proclaimed Friday, Nov. 24, 2023, as "Mia Peterson Day in Iowa'' to commemorate the 50th birthday of an under-recognized Iowan who worked throughout her adult life to promote self-advocacy and equal treatment for people with developmental disabilities.

Hi friends!! It's been a loooooong time and I've missed you! Lots of things happened over the summer but I'm back now and it's fall and it just had to share this really cool story about a young man named Jack. He finds friends and community through cooking and that is just about the coolest thing, don't you think? (Plus, it's caramel apple season and Jack *nailed* his caramel apples, don't you think?)

My son Jack has autism. He is nineteen.

Last year, Jack moved into a residential space. He takes classes at a nearby college.

We decided his first year away wasn’t about academics. It was about finding out if our son could live away from us.

There have been challenges. He is trying to understand this new social landscape.

Yet every week he bakes for the other students and staff in his residence.

He chooses a recipe.

He makes a list.

He goes to the grocery store and puts the ingredients in his cart.

Today he made caramel apples. He asked the other students to join him.

This boy Jack.

He is building a life for himself.

Food. Fellowship. Community.

He understands they are somehow intertwined.

To say I never imagined this day would come is a tremendous understatement.

The year of Jack. Indeed.

I've been wanting to get my friend, Angela, back to the kitchen for so long and today we were finally able to sync our schedules and make it happen! Lemon bars were made (they taste like spring!) and lots of fun was had. She was a baking boss, using a pastry blender like a pro and dusting the bars with powdered sugar for the perfect finishing touch. I can't wait to do it again, Angela!!

Hey Friends! It's been a minute -- I hope you're well on this very fine ! March 14 (3.14) is a big deal for food folk because it's a funny little pun on math and delicious things with crust! As if we needed a reason to make pie of some sort, am I right? If you are of the sweet pie ilk, we have a great (and simple) recipe in our library for Pineapple Pocket Pies using refrigerated pie dough, which is a great resource if you're a little nervous about making homemade pie crust. But if savory is more your speed, pizza is also a pie, and our Cheeseburger Pizza recipe is unique (ketchup and mustard are the sauce!) and easy way to celebrate! No matter your preference, happiest of Pi (Pie) Days to you!
