Il Mattaglio Brut Cantina della Volta è ottenuto dall’attenta vinificazione delle migliori uve di Chardonnay e Pinot Nero (vinificato in bianco) coltivate nel nostro vigneto collinare di Riccò di Serramazzoni (Modena), a 650 metri di altitudine sul versante modenese dell’Appenino tosco-emiliano, raccolte esclusivamente a mano in cassette da 15 Kg. I grappoli sono trattati con cura per evitare qualsiasi danneggiamento durante il trasporto e l’arrivo in cantina. Le uve vengono pressate sofficemente e solo il mosto fiore viene fatto fermentare in tini d’acciaio a temperatura controllata. Nella primavera successiva avviene la spumantizzazione secondo il tradizionale metodo classico della rifermentazione in bottiglia. Looking back on that unforgettable day under clear blue skies, I remember how our adventure continued with the majestic Mount Etna dominating the vine-covered horizon. Our invigorating morning run turned into an impromptu exploration, leading us past wild almond trees, fennel dancing along country paths, and the timeless beauty of century-old stone houses.

The morning's discoveries left us fulfilled and eager as we enjoyed a delightful lunch at the enchanting Cavanera del Etna wine resort.

The highlight of that day? Terrazze dell’Etna—a vineyard that perfectly blends tradition and innovation. Though just 15 years old, it boasts one of the highest elevations in the Etna region, with vines terraced up the slopes, reaching for the sky. The surrounding lava fields stood as silent giants, testament to Etna's fiery history.

Daniela, our charismatic host, shared captivating stories and expertise as she guided us through the vineyard, culminating in an exquisite wine tasting in an old farmhouse, rich with Sicilian heritage.

As the day waned, we relaxed back at the wine resort, embarking on a sensory journey through spirits distilled from the essence of Sicilian farms—apple, mandarin, pomegranate, pear—each flavor telling its own tale.

As dusk fell and the vineyard paths lit up like a trail of stars, we gathered for a dinner that was nothing short of a symphony, with Roberto, our sommelier, orchestrating an encore of vinous delight.

Retreating to our rooms, the day's tapestry of memories and flavors wrapped around us like a warm embrace, marking another chapter in our Sicilian saga.

We had the privilege of attending the annual trade tasting of the Hudson Valley Cabernet Franc Coalition at the stunning Ben Marl Winery. As we sampled the remarkable wines crafted from grapes grown right here in the Hudson Valley, we were struck by the depth of flavor and the commitment to quality that our local vintners embody.

The Coalition’s efforts to elevate Cabernet Franc as the signature grape of our region are not just about promoting local wines; they're about sustaining an entire ecosystem and community that thrives on authenticity and passion for the terroir.

However, it was disheartening to see the lack of representation from our local restaurant community at this event. While some restaurants do attend and support local wines, not enough do—especially many of the so-called farm-to-table establishments. As people deeply invested in the farm-to-table movement and local sustainability, we believe it’s crucial that we, as restaurateurs and chefs, support and champion the incredible viticulture happening right in our backyard. The quality of wine here in the Hudson Valley is exceptional, and it deserves to be celebrated and featured on our menus.

Thank you to Ben Marl Winery for hosting us and for being a pillar in our community. Let this be a call to action for our fellow restaurateurs: let’s not miss out on the opportunity to support and promote our local vineyards. We started our morning at the serene Planeta Wine Resort, surrounded by golden vineyards under the soft morning light. After a sumptuous breakfast, we bid farewell to this oenophile's paradise, carrying fond memories of exceptional wines and warm hospitality.

Our journey then took us to the breathtaking Scala dei Turchi, where the azure sea meets towering white cliffs—a sight that leaves a lasting impression.

Here, we paused to immerse ourselves in nature's grandeur before heading to our next destination.

Next, we ventured to Tenute Lombardo, known for their exceptional wines. Although no longer available in NY, their wines continue to captivate enthusiasts. We explored vineyards, enjoyed a delightful lunch in a historic farmhouse, and engaged in enriching conversations with GianFranco Lombardo and Daniela from Olio Arke.

Our afternoon was dedicated to the art of olive oil at Olio Arke, where tradition and passion converge to produce Sicily's finest oils. Daniela guided us through their meticulous process, offering insights into the nuances of their craft.

As evening approached, we arrived at Villa Floria, a haven recommended by Michelin, promising rest and relaxation. Here, we shared stories over glasses of wine and indulged in another gastronomic feast, celebrating Sicily's culinary excellence.
