Caesar’s Quail Wrap

Ingredients:
- 12 quail breasts, diced to taste
- 1 cup of bacon, cut in small pieces
- 2 Romaine lettuces
- Caesar’s sauce
- 4 large tortilla wrap
- Salt and pepper

Directions:
- In a pan, in a medium high heat, brown the bacon in their own grease, and remove much of the grease as possible with a paper towel or absorbent paper. Set bacon aside.
- Remove the quail skin, sprinkle salt and pepper and in the same pan, in medium heat, lightly brown the quail breast until cooked.
- Shred the Romaine lettuce and set aside.
- Take one large tortilla wrap, place the lettuce in the middle, put Caesar’s sauce to taste, arrange three quail breast cut into strips and the bacon.
- Fold the wrap beginning at the bottom and then the top, and wrap it carefully.
- For a better taste, you can heat the wrap a few minutes on the grill.

Baked Whole Quail

Ingredients:
- 4 whole quails
- 2 Onions
- Fresh rosemary (4 to 6 branches)
- 8 Garlic cloves
- 8 small potatoes
- Mustard
- White wine
- Olive oil, as desired
- 1 teaspoon unsalted Butter
- Salt and pepper

Directions:
- Cut the onions into 4 or 6 parts each. Place ¾ of them into a roasting pan with 1 tablespoon of olive oil, creating a bed of onions. Season the whole quails generously inside and out with salt and pepper and a pinch of mustard, then place the rest of the cut onions, 2 garlic cloves, a half branch of Rosemary inside each of the quail cavities. Place the quails on top of the bed of onions. Cut in half the potatoes and place around the whole quails, spray/sprinkle with olive oil and add fresh rosemary to the top of the potatoes, as desired. Preheat oven and bake for 40 minutes in 400 degrees F (205 degrees C).
- Remove from heat and deglaze with a cup of white wine to make the sauce. Remove the whole quails and roasted potatoes and set aside.
- In a small sauce pan, strain the juice and onions to make the sauce. Add a teaspoon of mustard, and then heat to a light boil and finish with a teaspoon of butter. Stir well and pour over the quail.

Quinoa Crusted Quail Slider

Ingredients:
- 1 pack quail breasts
- 1 cup quinoa, tricolor if available
- 1 large egg
- 1/2 cup Baking flour
- ½ cup Grated parmesan cheese
- 1 tablespoon Fresh chopped parsley
- ½ cup Vegetable oil
- Coleslaw salad
- 6 bread rolls

Directions:
- Soak quinoa in water for one hour (or the night before). Then rinse, and cook in a pan with 2 cups of water. When it starts to boil reduce to minimum, cover the pan with a lid, and cook for 20 minutes, or until quinoa is dry looking. Do not burn.
- In three separate bowls, have the large egg poured in, lightly mixed. In another bowl have the baking flour, and in the third, have 1 cup of the cooked quinoa, mixed with the parmesan cheese and the fresh parsley.
- Heat a frying pan with the vegetable oil, and season the quail breasts generously with salt and pepper. Take one breast, lightly cover with flour, immerse into the egg mix, and then put it into the quinoa mix. Make sure that each breast is fully covered with the quinoa mix. Then immediately fry, and do the same with each quail breast.
- Put the quinoa crusted quail breast in each dinner roll and place on the top with coleslaw.

Italian Quail Sliders

Ingredients:
- 6 quail breasts
- 1 teaspoon Oregano
- 6 Mozzarella slices
- 1 cup tomato sauce
- Fresh basil leaves (12 to 18 leaves)
- Salt
- Pepper
- 1 tablespoon Olive oil
- 6 mini sesame seed bread

Directions:
- Add 1 tablespoon of olive oil to a pan. Sprinkle quail breast with salt, pepper and oregano. Cook in pan for 5 minutes in medium heat or until quail breast is browned. Turn quail breast over. Put the mozzarella slices over the quail breast and cover pan until mozzarella has melted.
- Put a bit of tomato sauce over the bottom bread, placed the quail breast with the melted mozzarella, add more tomato sauce and finish with two or three fresh basil leaves, cover with the other bread half.

Quail Chili

Ingredients:
- 4 whole quails
- 2 medium onions
- 3 fresh tomatoes peeled and diced
- 1 large red bell pepper, cut in 1 inch strips
- 1 large green bell pepper, cut in 1 inch strips
- 1 can (16 oz) red kidney beans, drained
- 1 can (16 oz) black beans, drained
- 2 tablespoons chili powder
- 2 tablespoons ground cumin
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- Salt and pepper

Directions:
- Heat oven to 350 degrees.
- Cut onions into ¾ inch chunks, and place them in an oven pan, forming a bed.
- Salt and pepper the quails. Arrange them over the bed of onions, then cover oven pan with aluminum foil. Place in oven, bake for 45 mins or until the quails are tender.
- Remove the quails from the oven pan. Take the meat off the bones and cut the quail meat into small pieces. Set aside.
- Pour and drain the juice and onions left in the oven pan, into a saucepan. Strain and press them. Discard the pressed onions. Add the tomatoes, bell peppers, chili powder, cumin, cayenne pepper, dried oregano, salt and pepper. Put over high heat for 1 minute stirring frequently. Add the quail meat pieces, and beans, and simmer for 20 minutes.

Quail Pasta with Broccoli 🥦

Ingredients:
- 6 quail breasts
- 16oz freshly cooked penne pasta
- 1 small cooked broccoli
- ½ cup of Parmesan cheese (slices preferably)
- 1 cup of cream
- Salt and pepper
- Olive oil
Directions:
Remove the quail skin, and dice the quail breast, sprinkle salt and pepper.

In a pan on medium-high heat with some olive oil, brown the diced quail breast.

Once the quail breasts are ready, mix in the freshly cooked penne pasta, and add the cooked broccoli and cream. When it boils, reduce the heat to low, taste the salt, and add if necessary. Add the parmesan cheese, mix, and serve immediately.

Quail Cordon Bleu

Ingredients:
- 4 whole deboned quails
- 4 slices of cooked ham
- 4 slices of Swiss cheese
- Salt, pepper, and oil
- 1 teaspoon of mustard
- ½ cup of white wine
- 1 tablespoon of butter
- Chicken broth (optional)
- Toothpicks to secure

Directions:
- Take the deboned quails, and sprinkle salt and pepper to taste.

- Take one slice of cooked ham and one slice of cheese and cut them into four pieces each. Place each small piece on top of the other, alternating the ham and the cheese, forming a tower. Stuff the cavity of the deboned quail with the tower of ham and cheese. Secure close the quail with a few toothpicks. Do the same with all remaining quails.

- In a pan, on medium-high heat with some oil, lightly brown the stuffed quails on both sides. Start with the breast side. Once browned on all sides, add the wine and the mustard, and bring to a gentle boil. As soon as it boils, turn down the heat, and cover the pan with a lid for about 10 minutes, or until the quails are cooked inside. Check the bottom of the pan regularly, and add chicken broth or water such that the juice does not evaporate. Once ready, remove the quails. Add the butter to the pan and stir gently to create a creamy sauce. Remove toothpicks from quails, add the sauce on top and serve.

Quail Catcher Position

Job Description

The purpose of this position is to bring quail from raising farms to the plant for processing in a safe, efficient, and timely matter. This position requires working overnight, driving to and from farms and plant, and manually catching/loading quail. Will be required to work as crew under supervisor.

Individuals with driver’s license are preferred but not necessary.

The position starts as a trainee. Individuals should expect to move up quickly based on their performance. Pay is dependent on the number of individuals working that night and whether you drive a truck in our fleet as well as damage to quail picked up.

Minimum trainee hourly rate (w/o driving): $10

Qualifications

Must be able to constantly lift 50 lbs for the duration of the work shift

Must be able to bend, squat and kneel for duration of the work shift

Must be willing to work overtime, weekends, holidays and shifts with variable starting and ending times when needed.

Must be able to safely handle poultry without damaging birds

Must be able to work/maneuver through dark poultry houses

Job Duties

Preparing coops for the receipt of birds

Using Personal Protective Equipment properly

Ensuring high standards of hygiene at all times

Following all onsite rules for bio-security, Health & Safety etc.

Assisting with the selection and catching of birds

Catching and restraining birds in compliance with welfare rules and making sure that they undergo minimum levels of stress

Ensuring that birds are loaded properly into coops

Helping to load and unload birds

Taking instruction from Supervisor at all times

Quail Nachos

Ingredients:
- 6 quail breasts, diced to taste
- Corn tortilla, baked and in quarts
- 2 fresh tomatoes, peeled and diced into small cubes
- 4 oz. canned yellow corn, drained
- Cilantro leaves, chopped
- Jalapeños
- 1 tablespoon lemon juice
- 1 small red onion, chopped
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- Vegetable oil
- Salt, pepper

Directions:
Take the breast quails, and sprinkle the minced garlic, cumin, salt, and pepper to taste. Put into a skillet with a tablespoon of vegetable oil over medium-high heat, and cook until brown.

In a bowl, mix the tomato cubes, chopped onion, yellow corn and chopped cilantro. Add salt, pepper, cumin, and lemon juice. Then add the cooked quail and mix.

Spoon the mixture over the baked tortilla, and top with a cilantro leave and jalapeño.

Whisky Quail Breast

Ingredients:
- 12 quail breasts
- ½ oz. of whisky
- 3 tablespoons honey
- 2 cloves garlic, minced
- 2 branches of fresh rosemary
- Juice from 1 orange
- 1 tablespoon all-purpose flour
- 1 tablespoon butter
- 1 tablespoon olive oil

Directions:
- In a bowl, put the quail breast, whisky, honey, garlic, and rosemary. Mix all well and let marinate in the refrigerator for 1 hour.

- Add 1 tablespoon of olive oil to a frying pan. Sprinkle the marinated quail breast with salt and pepper, and cook for 3 minutes on medium heat. Turn the breasts over and cover the pan for 5 additional minutes, until cooked. Remove the quail breasts from the pan.

- Leave the pan on medium-high heat to slightly evaporate the juices, once reduced, add the orange juice until it breaks to a boil. In the meantime form a paste with butter and flour. Add it to the pan and beat until thick.

- Serve the quail breast with the sauce.

Quail Mushroom Fettuccini

Ingredients:
- 12 quail breasts, diced to taste
- 8 oz. fettuccini pasta uncooked
- 3 fresh tomatoes, peeled and diced in cubes
- 10 oyster mushrooms, sliced (if not available, use 10 regular mushrooms)
- ¼ cup white wine
- 2 garlic cloves, minced
- 1 tablespoon sage, chopped
- Salt, pepper
- Olive oil

Directions:
- Cook pasta according to package directions. Drain and set aside.

- Heat a teaspoon of olive oil in a large skillet over medium-high heat. Add the diced quail breast, salt, pepper, and 1 clove of garlic (minced), and cook until brown.

- Remove quail breasts and set aside.

- In the same skillet, where the quail was cooked, add a tablespoon of olive oil, the mushrooms, 1 clove garlic (minced), salt, and pepper, and sauté. Add white wine, and cook for 1 minute; then add the tomato cubes and chopped sage. Cook for 2 more minutes. Lastly, add the quail breast to the pan and mix well. Remove the skillet from the heat, add the recently cooked pasta, mix and serve immediately.

Stuffed Potatoes with Quail

Ingredients:
- 6 quail breasts, diced into small pieces
- 1 medium onion, chopped
- 1 clove garlic, minced
- 5 medium potatoes
- 4 quail eggs, cooked
- ¼ teaspoon ground cumin
- 2 black olives cut in half
- Vegetable oil
- All-purpose flour
- Salt and pepper

Directions:
- Boil potatoes in a saucepan with water. When cooked and still warm, remove the skin and mash the potatoes. You can use a potato ricer. Add salt and set aside.

- In a skillet over medium heat, cook the diced onion with one tablespoon of vegetable oil until soft. Then add the garlic, the diced quail breast, the cumin, salt, and pepper, and cook until browned.

- Separate the mashed potatoes into four portions. Take a portion and place it in the palm of the hand forming a cleft in the center. Place a spoonful of the quail breast mixture in the middle, and add one cooked quail egg and half a black olive. Close carefully leaving the filling in the center. Lightly flour each stuffed potato, and fry in hot oil.

Bacon Quail Rolls

Ingredients:
- 6 quail breasts
- 1 red bell pepper, cut into long strips
- 6 fresh basil leaves
- 6 bacon strips, uncooked
- Salt and pepper
- Vegetable oil
- Toothpicks

Directions:
- Place quail breast on a chopping board, and sprinkle with salt and pepper. Put a basil leaf and a red bell pepper strip on top of each quail breast.

- Roll up and wrap each breast with a bacon strip. Secure with toothpicks.

- Heat one tablespoon of vegetable oil in a skillet at medium-high heat, and cook quail rolls on all sides until the bacon is browned. Be careful with the toothpicks, and remove them when quail rolls are done.

- Serve as an appetizer with ranch sauce dip and boiled quail eggs, if desired.
