Day 5️⃣ we started off the day with a quick view of the Northern Lights on our way back from breakfast (sunrise wasn’t until about 9:30!) then we went on a cave hike and let me tell you when the Icelandic people classify a tour as an activity level 2 out of 5 they don’t mean the average American’s activity level 😅 we also visited Glacier Lagoon and Diamond Beach where we saw seals frolicking in the water 🦭 I wish you could see how absolutely gorgeous the last glacier photo was in real life- the pictures don’t even do them justice.

OK, hear me out, you probably don’t think of Universal Orlando Resort when you think about where to go on a romantic getaway.

Believe it or not, there are lots of ways to squeeze in some romance for you and your Valentine when you also like to walk hand-in-hand toward your favorite coaster!

Here are some suggestions:
Stay on property: Not only will you love the perks like being close to the parks but you also get daily Early Park Admission. Great properties for couples are Portofino Bay or Loews Royal Pacific (hello, Express Pass Unlimited) and Sapphire Falls (that lobby!!)
Dining: You’re going to want to avoid the common eateries full of kids and families. Give Mama Della’s at Portofino Bay and Mythos at Islands of Adventure a shot for some grown up dining.
Hollywood Drive-In Golf: What’s more romantic than serious competition?! Make a friendly bet and make sure the winner gets to pick out something special!
Feel like royalty with no lines or hassles and book a VIP tour. There are private and non-private options but the perks are amazing for either - things like front of the
line access, free parking, meals, and more!

If Iceland isn’t already on your bucket list you may want to add it! We got a spectacular showing of the northern lights tonight, checked out the 8th wonder of the world- the backside of water, visited one of iceland’s famous black sand beaches, checked into a beautiful little cabin far from the city lights and made friends with our tour group. This trip is what dreams are made of!

Day 4️⃣ in 🇮🇸 brought us to our second hotel, the Blue Lagoon and the Hallgrimskirjka church- both two very well known and visited spots in Iceland for tourists.
The blue lagoon was about 50 minutes from Reykjavik city center and it was crazy to drive through roads just now being rebuilt from a large volcano eruption in November- there were still bulldozers and crews moving lava rock from the roads and pieces of rock still smoldering. We were told that the volcano could erupt again at any minute and to be prepared to evacuate should we start to hear sirens 🚨 Tonight I feel some carb loading is in order before we hunt for the Northern Lights and tomorrow our tour officially starts! We will also be celebrating our 16th anniversary tomorrow!

Here’s a little secret: Tucked away at Loews Royal Pacific Resort is one of Universal Orlando Resort’s most enchanting hidden gems—the Wantilan Luau!

While others are chasing thrills in the parks, unwind with an island-inspired buffet, tropical cocktails, and a show straight out of an island paradise. Think vibrant hula dancers, fire twirlers, and the unmistakable spirit of aloha!

It’s like having a bit of Hawaii right in Orlando’s backyard!
Kids will be mesmerized by the performances (and appreciate a kid-friendly menu), and adults will love the endless Hawaiian dishes (and Mai Tais!). It makes for a
magical date night or a thrilling ending to a slow, easy non-theme park day. Talk about making memories!

What a day! We started with a walk around the city, followed by the Sky Lagoon with the “7 step ritual” which included a cold plunge, steam room and more and ended with our first sighting of the Northern Lights!

Introverts, let’s talk Disney Cruise Line dining.

If the thought of sharing a table at dinner makes you nervous, you’re not alone! While you can request a private table, sometimes you’ll be seated with other guests. But don’t worry! Here are a few pros about sharing a table:
You already have something in common—you’re all on a Disney cruise! Conversations often naturally flow around favorite activities, ports, or shows.
Many guests end up making friends or learning tips from their tablemates, which can be a fun bonus!
Kids often hit it off and make fast friends!

What to do if you REALLY want to dine privately:
Request a private table before your cruise and once again onboard. It’s not guaranteed.
Skip the rotational dining and grab a bite at one of the quick-service spots.
Order room service, it’s included in the price!
Treat yourself to Palo or Remy (reservations required).

We still receive Christmas cards from a family we dined with on a Disney Cruise back in 2017!

Our first 2 days in Iceland! 🇮🇸
We’ve shopped and walked around Reykjavik’s rainbow road , dined, sipped on cool cocktails at the ice bar 🥶 watched an indoor lava show 🌋and napped as we adjust to travel and a 5 hour time change. Tomorrow we plan to relax in the Sky Lagoon- a geothermal spa 🧖‍♀️

Super Bowl Sunday is here, and we’re all about the food!

There’s no wrong way to snack your way through the game. Whether you’re going with classic nachos, a savory charcuterie board, or keeping it light with a healthy mix like Batuu Bits, it’s a day to indulge in what you love to eat...oh and root for your team.

But let’s imagine for a second—you could cater your Super Bowl spread straight from a Disney restaurant.
Where would you pick? Will you grab Casey’s Corner hot dogs, cheeseburger egg rolls from the snack cart in Magic Kingdom, go all-in on a Flame Tree Barbecue feast, drink a liquid feast with a Dole Whip topped with rum, bring the magic of ‘Ohana to your living room or someplace else?

The wand chooses the wizard, you know, and everything about visiting The Wizarding World of Harry Potter is like stepping straight into the movies and books -even the wands!

Here are a few helpful tips for aspiring wizards to know before hitting these areas of both parks:

Interactive vs Standard Wands: Not all wands are created equally so be sure to choose wisely based on what you want to do. Interactive wands are pricier but there are lots of spell locations throughout both parks (marked by medallions on the ground) where you can put your wizarding skills to the test.

Ollivanders Wand Shop: For the serious fans, this is a special place. Small groups are taken into the shop and a lucky one will be chosen to go through a wand selection. Even if you aren’t chosen, you will find wands for all the beloved (and villainous) characters.

Spell Locations: There are more than 20 areas through the Wizarding World where you can test out your skills with an interactive wand, which comes with a map of spell locations. A word of warning, many of these are tough to get just right so don’t get discouraged. There are usually Team Members around to help if you need
a little extra assistance!

Step inside Disneyland’s Red Rose Taverne for cozy, storybook vibes straight out of Belle’s provincial town.
It’s a quick-service option (serving breakfast too!) with so much charm, proving that good ambiance doesn’t have to cost a small fortune (looking at you, Be Our Guest at Walt Disney World!). Speaking of Walt Disney World, quick service breakfast spots are hard to come by there, but not at Disneyland-there’s plenty of options. But at Red Rose Taverne, you can get a Mickey shaped pancake! And we all know, everything tastes better Mickey shaped!

Follow along on my Winter Highlights and Northern Lights tour of Iceland!

We will be arriving in Reykjavic and spending 3 nights on our own exploring and visiting one of Iceland's famous lagoons.

On Day 4 (our 16th wedding anniversary!) we will meet up with our tour group to travel to the Selijalandsfoss Waterfall, where you can walk behind the roaring cascades.
We will then make our way to Eyjafjallajokull, a volcano completely covered by an ice cap.
Next we will visit Reynisfjara, one of the most famous black sand beaches in Iceland known for it's black volcanic sands.
That night we will check into a hotel far away from the city lights for the best chance to view the northern lights.

On Valentine's Day we will set out on a glacier walk and ice cave tour at the Vatnajokull Glacier- the largest glacier in Europe.
After this we'll venture to Jokulsarlon glacier lagoon, famous for it's floating icebergs in shades of milky white and bright blue.
Our last stop for the day will be at Diamond Beach where we will see giant chunks of ice that have washed up on shore after being polished by the surf.

The 15th we will visit the famous Golden Circle. Our first stop will be the two-tiered Gullfoss Waterfall, we'll then make our way to the Geysir area to see the bubbling mud pots and spouting geyser which erupts steam and boiling water into the air every few minutes!
Our last stop will be the Thingvellir National Park, a UNESCO World Heritage Site for being historically significant to the founding of Icelandic democracy.

Or maybe someone who thinks farming is kind of boring? Living with the Land at EPCOT might just be the ride to inspire (or convert) them! I’m going to go out on a limb here to say this attraction is a must do and here’s why:
Yes, you’ll learn about cutting-edge agriculture like hydroponics and aquaponics, but this isn’t just a science lesson—it’s an eye-opener on how we can grow food sustainably for future generations.
Sharp-eyed fans will spot Mickey-shaped surprises in the greenhouses. It’s like a scavenger hunt!
From charming vignettes during EPCOT’s festivals to a holiday overlay at Christmastime, this attraction transforms with the seasons, adding a touch of
whimsy to every visit.
Many of the crops grown here end up in dishes at EPCOT’s restaurants—how’s that for farm-to-table magic?
Everyone gets a whole new appreciation for the food they eat after taking a spin on Living with the Land!

This attraction is also a great way to take a 20 minute break and enjoy some air conditioning! I've been known to ride it multiple times back to back!
