In the late 1980s, fish filleters were given the nickname "whackers" because they literally "whacked" (or filleted) halibut. Homer, Alaska is known as the halibut fishing capital of the world, and gradually fisherman came to use the nickname "Butts" as a shorthand to refer to the species, halibut. Buttwhackers was created in 2002 to provide the dock and fillet services to charters and independentl

y owned boats. Still today, we provide fisherman and captains alike with a location to unload and hang their catch, take photos, and of course, the show of 'whacking butts'.

This past week, filleter got the opportunity to present at the 2024 International Culinary Retreat with Alaska Seafood Marketing, hosted by the lovely Tutka Bay Lodge.

The event educated ten international chefs about Alaska seafood and sustainability, with a focus on wild Alaskan salmon. There were five species of salmon that were discussed, filleted (by yours truly), and then expertly prepared and tasted. 🐟 A big thank you to & for including us in such a meaningful event!
