🍋 Lemon Cake to Die For

🛒 Ingredients:
● 1 cup unsalted butter, softened
● 2 cups granulated sugar
● 4 large eggs
● 1 teaspoon vanilla extract
● 2 tablespoons lemon zest
● 3 cups all-purpose flour
● 1/2 teaspoon baking powder
● 1/2 teaspoon baking soda
● 1/2 teaspoon salt
● 1 cup buttermilk
● 1/2 cup fresh lemon juice

For the Lemon Glaze:
● 1 cup powdered sugar
● 2-3 tablespoons fresh lemon juice

🎂 Directions:
1️⃣ Preheat the Oven:
● Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

2️⃣ Cream the Butter and Sugar:
● In a large bowl, cream together the butter and granulated sugar until light and fluffy.

3️⃣ Add Eggs and Flavorings:
● Beat in the eggs, one at a time, then stir in the vanilla extract and lemon zest.

4️⃣ Combine Dry Ingredients:
● In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

5️⃣ Mix Dry and Wet Ingredients:
● Gradually add the dry ingredients to the butter mixture alternately with the buttermilk, mixing well after each addition.
● Stir in the lemon juice until well combined.

6️⃣ Bake the Cake:
● Pour the batter into the prepared baking pan and spread evenly.
● Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan.

7️⃣ Prepare the Glaze:
● For the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.

This week on November 16, we celebrate the birthday of King David Kalākaua. This photograph, taken at ʻIolani Palace, feature hula performers at King Kalākaua’s birthday celebrations.

King Kalākaua championed hula as an artform, and his time of governance (1874–1891) marked a public revival of Hawaiian culture. Bold patronage of hula was controversial at the time, because 19th-century missionaries in Hawaiʻi considered hula “non-Christian” behavior. Beginning with King Kalākaua’s reign, ʻIolani Palace grounds became a site for hula’s revitalization after decades of suppression.
