NATIONAL CHOCOLATE ECLAIR DAY

Oh my gosh, this is definitely my very favorite day! National Chocolate Eclair Day falls on June 22 each year and recognizes a delicious cream-filled pastry covered in smooth chocolate. Pastry. Check. Cream filling. Check. Chocolate. Check. What more could you want in a food holiday? Maybe a cup of coffee to go with it, but other than that, you won't need anything else.The word eclair comes from the French word, meaning “flash of lightning.” The connection between the word and this French pastry remains unclear. Some people suggest that the éclair is so named because it is eaten so quickly. For instance you might say, “You ate that in a flash!” Another interpretation, however, says that the name came from the glistening of the frosting, which resembles lightning. NATIONAL AMERICAN EAGLE DAY

Each year on June 20, National American Eagle Day honors our national symbol, raising awareness for protecting the Bald Eagle. The day also encourages the recovery of their natural environments while providing educational outreach. In the latter 20th century, the Bald Eagle hovered on the brink of extinction in the continental United States. Eventually, populations recovered and on July 12, 1995, the species was removed from the U.S. Federal Government’s List of Endangered Species and transferred to the List of Threatened Species. In June of 2007, as the species continued to thrive, the American Eagle was withdrawn from the List of Endangered and Threatened Wildlife in the Lower 48 States. Opportunistic feeders, Bald Eagles survive mainly on fish, swooping down and snatching them from the water. Their nests are the largest nests of any North American bird and the largest tree nests ever recorded for any animal species. The largest recorded eagle's nest was found in St. Petersburg, Florida. It measured 9.5 feet in diameter and 20 feet deep and weighed in at nearly 3 tons. These majestic raptors tally up quite a list of facts. A fully grown female Bald Eagle has a wingspan of 2 meters (7 feet) and weighs 3 to 7 kilograms (7 to 15 pounds). Male eagles are slightly smaller. They also mate for life and live between 20-30 years. Join the celebration by learning more about the American Eagle. Whether you visit a nature preserve or learn about conservation, be sure to invite someone to join you. You can also learn about the American Eagle in other ways, too:

NATIONAL GO FISHING DAY

This is my husband's favorite day!Considering where we live, this is the perfect spot for this National Holiday! We have so much here, Grouper, Trout, Snook, scalloping to name a few. Where else can you live that is so perfect for fishing? We have fishing in the Gulf of Mexico, down in the Florida Keys or in the Atlantic ocean! Each place offers different variety's of fishing. I cannot think of a more perfect state than Florida for this sport! Plus there are so many vacation spots that are close to us. You can get away without having to go a long way from home, great for a weekend, long weekend or a week if you have the time. NATIONAL APPLE STRUDEL DAY -- I love Apple Strudel - how about you?

On June 17 get whirled up in pastry dough, apples, and spices and celebrate National Apple Strudel Day. In German, the word strudel means whirlpool or eddy. This tasty dessert is perfectly described in its German language as the sweet mixture of fruit, sugar, spices, and layers of thin dough rolled together and baked. The result is a bubbling, flaky treat.As a breakfast item or dessert, apple strudel goes well with coffee and tea. Consider adding it to a brunch or bake ahead for guests. Many years ago I had a boss that I was telling him why my family could not go on a vacation, the usual, not time, not enough money. He sat me down and told me a story. He and his wife decided that he was going to retire in 7 years and they would save up their money and when they would do cruising. So they saved their money and did not take any trips. 6-1/2 years later his wife got Cancer and passed away. So the only times he had to remember was her dying, no fun times and memories to remember. His advise was, do not wait, take as many trips as you can to make those memories. Remembr life is short and we do not always know what God has in store for us. We could be here 60 years or 6 days.
