Oh, my goodness, this Lentil Chili is the best! My kids gobble it up. 🍲

One son throws in a tortilla, and the other adds cheese, tortilla chips, avocados, and sour cream. My husband puts his over rice.

1 cup ish gives you 10 gm of fiber and 28 gm of protein🤯

I learned much about lentils during my undergraduate studies at the University of Idaho.🎓 The Palouse—the Lentil Capital of the World—is famous, you know!

So I did the math when writing this post, and yes, I have been a Registered Dietitian Nutritionist (RDN) for a whopping 27 years... 2---7 WTF?!? WOW!😎
