Leucaena Leucocephala, also known as Haole Koa, is one of the most commonly seen invasive plants on Maui especially in dryer areas. Chances are it’s in your own back yard. Did you know that it’s also edible when prepared properly? New growth, flower buds, young seed pods, and immature seeds are especially tender. The immature seeds make an especially tasty snack. Eating edible invasive species like this may be a great way to deal with the problems they pose. Why not make use of these resources when removing them? There’s many more edible invasive species of plants throughout Maui. There’s food all around us if we know what to look for. The possibilities are endless if we can shift our mentality and look at things differently. Here I blanched the young pods and new growth, and mixed with sesame oil, patis, and a little bit of salt and pepper.
