As we gather around the warmth of the season, Jon, Lady, and I want to take a moment to thank each of you who stayed with us at the Gingerbird Art Suite this year. Your stories, laughter, and moments shared have filled our home with so much joy and gratitude.

Tonight’s homemade dinner was a delightful blend of flavors and textures. We made baked sweet potatoes, topped with creamy ricotta, drizzled with tahini, and sprinkled with chopped dates, lemon juice and zest, olive oil, spinach, and scallions with a side of avocado. Each bite was a perfect mix of sweet, tangy, and savory.

For the main dish, we served herb balsamic chicken, marinated in balsamic vinegar, fresh herbs, garlic, and olive oil, then sautéed to perfection. The tangy, herby chicken paired wonderfully with the sweet, nutty sweet potato. This meal was a perfect balance of healthy and indulgent, truly satisfying and delicious!
