Slow Cooker Sausage Breakfast Casserole
Ingredients
1 pkg (26 ounces) frozen shredding hash brown potatoes
1 pkg jimmy dean hearty original sausage crumbles
1 c (at least 4 to 8 oz) shredding mozzarella cheese
1/2 c (at least 2 to 4 oz) shredding parmesan cheese
1/2 c julienne cut, sun dried tomatoes packed in oil, drained
6 green onions, sliced-diced
12 eggs
1/2 c milk
1 tsp salt
1/4 tsp ground black pepper
Directions
1. Spray a 6 quart slow cooker with non-stick cooking spray.
2. Layer 1/2 of the potatoes on the bottom of slow cooker.
3. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.
4. Beat eggs, milk and pepper in large bowl with a wire whisk until well blended.
5. Pour evenly over potato-sausage mixture.
6. Cook on low setting for 6-to-8 hours, or on high setting for 3-to-4 hours...or until eggs are set. Should serves about 12 or so.

4 large potatoes diced
water enough to cover top of potatoes
1 cup diced onions
2 cups milk
3 chicken bouillon cubes
2 tablespoons flour
2 tablespoons dried parsley
1/2 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon hot sauce
1 cup shredded cheddar cheese more to garnish

Chicken Broccoli Macaroni and Cheese with Bacon
Ingredients:
6 ounces of uncooked pasta of your choice
3 cup fresh pre-chopped broccoli florets
3 slice bacon, coarsely chopped
12 ounces skinless chicken breasts, cut into ,1/2 inch thick
1 tsp. salt
1 tbsp. garlic powder or minced garlic
1 1/4 cups milk
1 cup chicken broth
1/4 cup all purpose flour
5 ounces of cheddar cheese,shredded
Procedure:
Start by cooking your pasta al dente. During the last two minutes of the pasta being done,add broccoli to same pan, so it can boil. Drain pasta mixture. Set aside. Cook bacon in a skillet. 4 to 6 minutes or until crisp. Remove bacon with a slotted spoon and set aside. In the same skillet, use the bacon grease and cook your chicken. Season your chicken with garlic and 1/4 tsp. of salt and then cook in pan with the bacon grease. Cook chicken for about 6 to 8 minutes. Combine remaining 3/4 teaspoon salt, milk, stock, and flour, stirring with a whisk. Add milk mixture to pan; bring to a boil, stirring frequently. Cook 2 minutes or until thickened. Add pasta mixture and 2 ounces cheese; toss to coat. Sprinkle with remaining 3 ounces cheese and bacon. Broil 2 minutes or until cheese melts.
Crab Cake Ingredients:
1/2 red bell pepper, finely diced
1 medium onion, 1 cup, finely diced
3 Tbsp olive oil, divided
2 Tbsp unsalted butter, divided�2 large eggs
3 Tbsp mayo�1 tsp Worcestershire sauce
1 tsp old bay seasoning , or cajun seasoning
1/2 tsp garlic salt�1/2 tsp black pepper
1 lb lump crab meat, from 2 Dungeness crabs�1/2 cup panko bread crumbs�1/4 cups parsley, finely chopped

* In a large skillet over medium heat, add 1 Tbsp oil and sautee diced bell pepper and onion until golden and soft (7-9 min) then remove from heat and let cool.
* In a large mixing bowl, whisk together 2 eggs, 3 Tbsp mayo, 1 tsp Worcestershire sauce, old bay seasoning or cajun, garlic salt, and 1/2 tsp black pepper.�
* Drain and pick over the crab meat to make sure there aren’t any stray shells, lightly breaking up big pieces of meat. Transfer to the large bowl with egg mixture.
* Add cooled bell pepper and onion, panko crumbs and parsley and stir until combined and moistened. Cover and refrigerate 30 minutes.�
* Divide mixture into about 15 cakes. With wet hands, lightly shape into 1/2” thick patties. Place a large non-stick pan over medium heat with 1 Tbsp oil and 1 Tbsp butter and sautee crab cakes in batches for 4-5 minutes per side (reduce heat if browning too quickly). Transfer to a serving platter and repeat with remaining crab cakes adding more oil and butter.
Crawfish Gumbo
Ingredients
⅓ cup vegetable oil
½ cup all-purpose flour
1 cup finely chopped white onion
1 medium green bell pepper, seeded and chopped
1 medium red bell pepper, seeded and chopped
1 cup chopped celery
5 cloves garlic, minced
8 cups water
2 tablespoons Cajun seasoning
1 (28-ounce) can diced fire-roasted tomatoes, undrained
1 pound large fresh shrimp, peeled and deveined (tails left on)
2 cups sliced fresh okra
2 (16-ounce) packages cooked crawfish tails, undrained
Hot cooked rice (for serving)
Garnish: chopped parsley and sliced green onion
Instructions
In a large Dutch oven, add oil, and heat over medium heat for 5 minutes. Add flour, and whisk until combined. Lower heat to medium-low, and cook, stirring, until a dark chocolate roux forms, 30 to 40 minutes.
Add onion, bell peppers, and celery, and cook, stirring, until onions are tender, about 15 minutes. Add garlic, and cook 30 seconds. Add 8 cups water, Cajun seasoning, and tomato. Bring to a boil; reduce heat, and simmer 1 hour.
Stir in shrimp, okra, and crawfish. Bring to a boil; reduce heat, and simmer 15 minutes. Serve with rice. Garnish with parsley and green onion, if desired.
LOBSTER, CRAB AND SHRIMP MACARONI AND CHEESE
Ingredients
1 lb. elbow macaroni
1/2 cup unsalted butter divided
1/2 cup flour
3 cups whole milk, room temp
1 cup heavy cream, room temp
4 cups grated Gruyere cheese
2 cups grated sharp cheddar cheese
Salt to taste
Fresh ground pepper
1 1/2 lb. A mixture of crab, lobster, and shrimp
1 cup panko breadcrumbs
Directions
Preheat the oven to 350°F.
Use cooking spray to coat a 2-quart baking pan. Butter can also be used to lightly coat the dish.
Follow the instructions on the package to cook the pasta until it is al dente. Drain the pasta, rinse it with cool water, and then set it aside.
How to Make the roux
Melt 6 Tbsp. Place 6 Tbsp. butter in a large saucepan over medium heat.
Mix the flour with the water and continue to whisk until well combined. This should take about 30 seconds.
Slowly add the milk, and cream, and whisk constantly until smooth. Reduce heat to low.
How to make the Cheese Sauce
Mix the shredded cheeses one at a time into the roux. Stir to combine between each addition.
Salt and pepper to your liking
Turn off the heat
Here is how to Bake the Mac and Cheese
Mix the seafood and cooked pasta together in the cheese sauce.
Place the mixture in the prepared baking dish.
The remaining 2 Tbsp. butter, melt it. Mix the butter with the panko.
Sprinkle the cheese on top.
Bake for 30 minutes or until the seafood mac cheese is hot through and the breadcrumbs are golden brown.
Serve immediately
