Experiencing Song Dynasty Tea Whisking in the Hutongs of Beijing

Over 1,000 years ago, scholars of the Song Dynasty had an ultimate pursuit of elegance. Among the four refined arts of the time—incense burning, tea whisking, painting appreciation, and flower arranging—Dian Cha (tea whisking) held a special place.

This traditional tea preparation method, popular among Song Dynasty literati, involves whisking powdered tea into a fine froth, much like modern matcha. It also gave rise to artistic tea practices such as Cha Bai Xi (tea pattern play), where hot water was used to create intricate patterns on the tea’s surface, and Cha Gao Hua (tea paste painting), which involved painting delicate designs using concentrated tea paste.

Today, these traditions remain a fascinating part of China’s tea culture, preserved and practiced in select tea studios.
