Rhubarb Cordial - makes 4 cups
1 pound fresh or frozen rhubarb, cut into chunks.
Zest and juice of one lemon
1 cup sugar
2 1/2 cups water

Combine the rhubarb, lemon juice and zest, sugar, and water in o large saucepan. Bring to o boil over
medium high heat. Reduce the heat to low and continue to cook until the rhubarb is extremely tender and
the sugar dissolves (about 15 minutes).
Remove from the heat and pour the mixture through o fine mesh strainer, pressing on the solids to make sure thot you extract as much rhubarb flavor as possible.
Chill and serve.

Rhubarb Martini - Makes 4 drinks
1 cup vodka
½ cup triple sec
1/2 cup rhubarb cordial (see cordial recipe above)
1/4 cup freshly squeezed lime juice
Combine all ingredients into cocktail shaker with ice. Shake vigorously. Strain and pour into 4 glosses.
Serve immediately
