1st time back in Key West in 3 years, I caught some lobster and speared hogfish. Made brunch for friends we're staying with, panko, cashew encrusted lobster and hogfish bites, Atlantis House favorite cold lobster with tomato and Kayla's special sauce, fruit salad and pineapple from my garden. Yum!

We went snorkeling at Salt Springs, located in the Ocala National Forest in Florida, which was once believed to be the Fountain of Youth. The water had a high salt content and maintained a constant temperature of 74 degrees year-round, slightly warmer than other local springs. As we dove down into the spring heads, we saw blue crabs lining the stone walls and large mullet circling us, reminiscent of coral formations.

Starting to look like Halloween!

Another beauty right out of the oven. I do not use stabilizers like cream of tartar for my meringue because I don't like how it sours the taste. I find I don't need it at all, even on rainy humid days. My meringue is not an after thought or just there to look pretty. It is an integral part of my pie and beautifully compliments my tart filling and crunchy, buttery crust with a delightful toasted marshmallow flavor! I can honestly say I have curated my pie for a trifecta of flavor!

Gorgeous day to take in the sights at one of three Civil War Era forts on the island. This one houses some amazing junkyard sculptures by Stanley Papio and is a museum dedicated to Key West History. Of course we can't forget "Robert the Doll" !

Always fun to visit Bahia Honda on the way down to Key West just after the 7-mile bridge. Or if you are in Key West with a car it's 35 miles up on the Ocean side.

Thank you Texans for saving nearly 5,ooo sea turtles from the frigid waters off the coast of South Padre Island!!!

Paralyzed by frigid water around South Padre Island, sea turtles washed up on beaches by the hundreds, where volunteers rallied to save them—all without power or heat.

Great Eco adventure trip today. Even with the Southwind we had amorous dolphins around the boat. Maybe they celebrate Valentine's day too... And we are fortunate to see 2 sea turtles in the backcountry in only six feet of water. Captain Steve

Awesome eco-adventure trip today! Snorkeling, dolphin watching, beachcombing and bird watching. Besides the local brown pelicans we saw white pelicans and also black skimmers for the first time this year. Always an adventure!

Spectacular day fishing. Limited out on yellowtail snapper and this trophy 30 lb black grouper caught on a yellowtail rig with 15lb leader, a shrimp and the smallest hook on the boat. Oddly instead of running for the bottom he screamed out 200 feet of line straight off the back of the boat. We were fortunate to turn him. Gregg epically fought for close to 20 minutes and afterwards the fish was released to swim another day. Always an adventure! Captain Steve

Great day on the Reef snorkeling. Good visibility and tons of tropical fish. We also saw three sea turtles and dolphins on the way in and out. Always an adventure.

Few trees in the Florida Keys change color like the trees up north in the fall. However, after a few weeks of cold nights the see grape tree native to Florida and the Caribbean with pigmented xanthophylls displays bright orange, yellows and reds.

I have never seen so many snowy egrets, mixed in with white heron and Ibis. They were ravenously feeding before the cold front came in today. Snowys were almost wiped out in the late 1800s early 1900s to fill the need for the Hat industry which was paying $0.50 a feather for they're beautiful plumage. Thankfully, now they are all federally protected.

Today was a "Nat Geo Day" on an eco-adventure trip with bottlenose dolphin chasing pilchard fish out of the water with frigate birds swooping in to grab them. The pilchards as they leaped out of the water, what they thought was their escape, was only into the mouths of frigates. Always an adventure!

Running my new engine on an Eco adventure trip to Boca Grande. May my old engine rest in peace or should I say pieces since she will be disassembled and repurposed as used parts on other engines. Another great day on the water with calm seas!

Fun day fishing with Allyson and Darrell. Good bite on yellowtail, lane and mutton snapper. Great time catching groupers and at the end of the day landing huge barracudas!
