Many of the oyster farmers prepare them in a variety of ways and open their rustic & authentic farms to the public for degustation. When in Carcassonne, France: avoid the tourist trap restaurants within the walls of the medieval fortress and try Vendimia, a cozy cellar/wine bar serving local cheeses and delicious wine for light lunch, and sumptuous tapas for dinner. Come in June when the season has not started in this part of France yet and the owner has time to show you how to make the best “Pan con Tomate” (Spanish tomato bread)
