Hi everyone!! Someone just mentioned to me that May is "December is Disguise" ... I love this because it is totally true!!! Or maybe it is the other way around - December is "May in Disguise" - either way we are all sooooo very busy this time of year. Which is why I have not been able to put together a menu in recent weeks. I haven't been able to follow my own advice recently!!! We have had cereal, sandwiches and take-out a little too much over the past few weeks! Needless to say I have taken a break from publishing the menus and will continue to take a break until school is out and we can get our feet back on the ground! Just wanted to let you all know that I am still here and will be back soon!!!

Hope you are all surviving the influx of chocolate and sugar at your house! We are also inundated with hard boiled eggs!! Tomorrow the menu features Egg Salad BLTs ... That will not even make a dent in our stash! Any ideas??? I know hard boiled eggs last awhile but .... Any ideas are appreciated!

I thought it best to keep things on the lighter side this week after feasting on Thanksgiving and of course all of the nibbles and picks at the leftovers all weekend long!! Meatless Monday will feature fish that is combined with creamed spinach and buttery crackers - chicken is a perfect substitute....
