Originally made by European immigrants in the mid-to-late 19th Century, American Style Lager is one of the most consumed styles of beer in the world. American barley at the time was ill suited to making beer, creating harsh flavors with lower levels of fermentables. Corn and rice (widely grown and easily obtained) were often substituted to mellow this animal feed grade barley, increase fermentable sugars, and smooth out flavor. It was these brewers, recreating the traditions and flavors of their homeland country with the tools of their new land, that launched the dominant lager breweries of today, though many of them are now owned by multinational conglomerates. Aggressive industrialization, globalization, and growth driven economics concerned solely with the bottom line have turned corn and rice from home-grown crops into flowable solid extracts and flavor has taken a far backseat to P&L statements.

As a Midwesterner, I grew up around beer and corn and bringing those halves of a whole back to harmony is very important to me. Modified Action is made with 100% North Carolina-grown corn and barley. The corn, from in , is hand milled and cereal mashed with our barley from , before being fermented cold and slow, and conditioned until ready.
