This collaboration was sparked during Cerveza México, in the midst of a lively conversation among friends, beers in hand, with Chris White. This beer is a true representation of Alsatian Pilsners (Al-say-shn), the "lost sister" of German and Czech Pilsners, known for its elegance and the unique character of noble hops like Strisselspalt.

We chose WLP833 German Bock Lager Yeast to provide the solid backbone this beer needs, complementing the light body contributed by the corn. Its ability to balance malt and hop character aligns perfectly with our goal of creating an elegant yet authentic Pilsner that pays homage to the Alsace brewing tradition.

Additionally, we decided to use WLP4062 La Fleur Ale Yeast on a portion of the wort. This allows us to reimagine how a truly French Grisette might have been, offering a creative interpretation that highlights the versatility of the ingredients and the region’s rich brewing heritage. Both strains bring something unique to the table, making this project as exciting as it is meaningful.

Since the early days of The Yeast Bay , we’ve worked closely with Altbrau, the brain child of our good friend Tim Decker that fuses brewing innovation, artistry, and tradition. The primary goal of our collaborative efforts has been to capture, isolate, and evaluate wild yeast for beer production across a wide swath of styles.

While on a bioprospecting trip in the Berkeley Hills of California in 2016, countless samples of flora and fauna were collected in our search of unique yeast. Following our isolation and sequencing efforts, while most of the isolates were found to be of little value for beer production, one stuck out that held real promise: WLP4650 Metschnikowia reukaufii.

WLP4650 Metschnikowia reukaufii is a wild yeast whose native habitat is the nectar of flowering plants, which typically contain high concentrations of glycosides. This yeast evolved to enzymatically act on these otherwise inodorous glycosides, freeing the flavor-active aglycones and producing a more fragrant nectar that more effectively attracts pollinators. The enzymes produced by Metschnikowia reukaufii that accomplish this biotransformation are members of the glycoside hydrolase family, which includes β-glucosidase. Lucky for brewers, many beers (particularly hop-forward beers) contain high levels of hop-derived glycosides that, when enzymatically released, produce a more complex, flavorful, and aromatic beer.

While WLP4650 Metschnikowia reukaufii produces flavor active enzymes that amplify the character of a beer, it’s also maltose negative. Although this necessitates co-fermentation with a maltose positive yeast for a normal beer, the maltose negative phenotype makes it the perfect standalone yeast for any hop-forward low ABV beer, near beer, or non-alcoholic beer!

Did you guess WLP618 NA All Day from yesterdays post?

Great job! This strain of non-conventional/ NA brewing yeast, Saccharomycodes ludwigii, has been found to be useful when brewing a low alcohol/non-alcoholic beer. This specific strain has been chosen because of its lower ethyl acetate production compared to similar strains. This species is maltose negative as it does not ferment maltose or other larger sugars and will only ferment the glucose, sucrose, and fructose.

Today, we're raising a glass to the 39th President of the United States🍺

Jimmy Carter had a lasting impact on the homebrewing community, mainly through his 1978 legislation that legalized homebrewing in the U.S. Before this, brewing beer at home was largely illegal due to Prohibition-era laws. By signing the bill, Carter allowed individuals to brew up to 100 gallons of beer per year for personal use, which sparked a surge in homebrewing across the country.

Carter also personally supported homebrewing, even having beer brewed at the White House, which helped normalize the practice. The changes he enacted contributed to the rise of craft beer and the vibrant beer culture seen in the U.S. today.
