Oil Down: Grenada’s Hearty One-Pot Wonder

Discover a taste of the Caribbean with a recipe straight from Grenada. This enchanting lesser known Caribbean island known as The Spice Island, is famous for their tasty national dish, Oil Down. This authentic dish has been warming hearts for generations and is a celebration of local flavors, combining tender salted meat, fresh chicken, starchy breadfruit, vibrant greens, and a rich coconut milk broth. Whether you're a seasoned cook or a curious foodie, this authentic dish will transport you straight to the Caribbean, inviting you to experience a true island feast.

Ingredients:

1 lb salted meat (salted pork or salt beef; soak overnight to reduce salt)
1 lb chicken pieces (optional, for added flavor)
1 medium breadfruit, peeled, cored, and cut into chunks
2 medium potatoes, peeled and cut into chunks
1 large carrot, sliced
1 onion, chopped
2 cloves garlic, minced
1 Scotch bonnet pepper (keep whole for mild heat or chop for more kick)
2 cups coconut milk
1 cup water or low-sodium chicken broth
2 cups fresh callaloo or spinach (or collard greens as a substitute)
2 cups homemade or store-bought dumplings (simple flour dough balls)
1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
Fresh parsley for garnish (optional)

Instructions:

1) Prep the Proteins: In a large pot, cover the soaked salted meat and chicken pieces with water. Bring to a boil, then simmer for 30 minutes until tender. Drain and set aside.

2) Build the Base: Return the meat and chicken to the pot. Add the breadfruit, potatoes, carrot, onion, garlic, and the Scotch bonnet pepper.

4) Final Touches: Gently stir in the dumplings and greens. Cover and simmer for an additional 15-20 minutes until the dumplings are cooked through and the greens are tender.
