Farm fresh from to you from us! Fjordlux destinations coming up this weekend…

-Friday May 6: Salish Sea Greens] at the Moonlight Market 5pm-9pm on Bainbridge Island. Music, art, oysters and drinks!

-Friday May 6: Salish Sea Greens] with 4pm-7pm. Pair super fresh Hood Canal oysters with award winning wine and house made accoutrements.

-Sunday May 8: is making sure mom (and everyone else!) gets treated right with fresh oysters, bubbly and flowers!

Dark chocolate kelp ice cream: As the days get warmer, so grow my ice cream hankerings!

Back from a little hiatus to bring this fun springtime recipe to you, inspired when a friend lent me an electric ice cream maker. If you know me you know I’m always on the lookout for incorporating wild harvested anything into my food, and the more inventive the better.

So, as our container of dried kelp from our harvesting on Puget Sound last season sat on the counter, it struck me that kelp + chocolate could make a nice salty/sweet combo for ice cream. The result in a deliciously creamy ice cream that’s chocolate up front, with a hint of salt, along with pleasing chewy bits of kelp intermixed – the kelp consistency becomes a little bit like tapioca (which I really love).

Overall, super tasty - like rocky road but kelp instead of nuts?

🌟Delectable Peanut Butter Nettle Cookies🌟
 
Not quite a shellfish recipe, but still something wild food centric. A friend mentioned that nettles don’t have to be savory but can be incorporated into sweet too. Her style was a nettle pancake of types (though she was cooking over an open fire, which is just a total step above in the rustic charm factor).
 
So we took a try at it too, and were really happy with the results. The nettles come through mildly but clearly, and are a really nice combo with the savory of the peanut butter. On the second batch I sprinkled the top with a little granulated sugar, and liked that spark of sweet. Though I do like how these turned out I might experiment again – this recipe results in a cake type cookie, as more flour than I anticipated needs to be added to balance out the moisture from the nettles, and next time I’d shoot for denser.

Spring is here and we’re going nettle crazy with the rest of the culinary world. Here we have roasted oysters with nettle pesto. Savory of the sea with savory of the land? YES.
 
One of the things I love most about nettles is that…they are free. Yet so healthy (so I understand). And though they literally grow on the side of the road or in a backyard they somehow have a fancy feel to them? (or maybe that’s just me)
 
Remember, if you are going to forage for your own nettles make sure 100% that what you harvest are indeed nettles – check with an expert if you aren’t sure.
 
Nettle pesto recipe:
-2 cups packed, processed nettles (processed meaning stocks removed, only leaves, and par boiled to remove the sting)
-1 cup grated parmesan cheese
-1/2 cup shelled pistachio nuts
-1/4 cup pine nuts
-Juice from half a large lemon, or more to taste
-Olive oil, ¼ cup to start out
 
Combine all ingredients in a food processor or blender excepting olive oil (I do understand that pesto is far superior if made with a mortar and pestle – so if you have the time that might be fun to try!). Add just enough olive oil to allow mixture to blend, then keep adding olive oil tablespoon at a time till the pesto consistency is thick but would still run off a spoon.
 
This pesto can be used on everything from pizza, to pasta to oysters! 
 
For roasted nettle pesto oysters pre-heat your oven to 425 F. Shuck off just the top shell of however many oysters you desire, then place them on a baking sheet. Put a tablespoon or so of nettle pesto on top, top with a sprinkle of grated parmesan cheese, and then place in the oven on the top rack (but not the broiler rack, one down from that). 
 
Check for doneness at 15 mins (we like to see that the cheese has started to caramelize before taking out of the oven). Enjoy your spring time feast!

My first reaction to seeing this photo was, “Man, I look worn out.”

But then I came to really love this photo, because truth is running an oyster farm does wear you out - it’s hard work. This is a really honest photo that captures both the grind AND beauty of farming.

In response to a changing world the last few years we’ve pivoted, reimagining what we do and how we do it. It’s been fun, challenging, energizing and tiring - all at once! I think about all small business owners working through all the changes, and if only I had the ability to let them know they are in my thoughts often.

I don’t know if I say this enough, but thank you. Again and again, thank you for coming along with us on our oyster farm journey :)
