Buckwheat blind test:
Making galettes with 3 different buckwheat.
1. Bob's Red Mill buckwheat (USA)
2. Treblec Buckwheat (Brittany France)
3. Toasted grinded Buckwheat seeds from PCC (Fairview USA)
6 human testers.
The results:

It is hard to get over the dramatic dark gray color of Bob's Red Mill. The taste is nice, but slightly harsh.
I was really surprised by the mild flavor of the toasted buckwheat. The nutty smell is strong. To the taste, it is nutty, but not as strongly as I expected. Quite nice actually.
The Brittany galette had the slight nutty taste and stayed smooth.
Another consideration not considered during this experiment : was smooth it is to make, from making the batter to spreading on the crepe maker.
There again, 2. was hands down smoother than the other two, easier to beat, easier to spread.
I really expected more from 3. It might have been because I did not grind the seeds fine enough... I might give it another try another time...
In conclusion, Brittany flour is the best for galette. How surprising! :>
