Raspberry Shortbread Bars
Five-Ingredient Raspberry Shortbread Delight
Ingredients:
1 cup unsalted butter, softened
½ cup granulated sugar
2 cups all-purpose flour
½ cup seedless raspberry jam
¼ cup powdered sugar (for dusting)
Directions:
Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, allowing the paper to hang over the sides for easy removal.
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
Gradually add the flour, mixing until the dough comes together. The dough will be crumbly but should hold together when pressed.
Take about two-thirds of the dough and press it evenly into the bottom of the prepared baking pan to form the base layer.
Spread the raspberry jam evenly over the dough base, leaving a small border around the edges to prevent the jam from sticking to the sides of the pan.
Crumble the remaining dough over the top of the jam layer, ensuring that some of the jam peeks through.
Bake for 35-40 minutes, or until the top is lightly golden and the edges are set.
Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment paper and dust with powdered sugar before cutting into squares.
