Attention artisan cheese lovers. Let's talk about blue spots on soft cheeses like this goat cheese. Did you know that artisan cheese is a living, breathing food made by the magical process of fermentation? Cultures (bacteria) kick-start the process and, as cheese ages, contribute to flavor. As a cheese spends time in an aging cave, molds, yeasts, and bacteria compete for space on the rinds. Sometimes, things like blue and black molds appear on the surfaces when the humidity and temperatures are high. This is not dangerous mold-it is harmless and believe it or not completely edible. These blue spots are penicillin Roqueforti, the same mold found in blue cheese. I know many of you are used to food that is always the same but we want you to have a better understanding of what it means when a cheese is handmade in small batches. We need to embrace the imperfect and open our minds and taste buds. The flavor reward is the benefit!
