Not every Panel Saw plate is a perfect 10 right off of the grinder. Sometimes they need a little more straightening through the process of hammersmithing.
Hammersmithing involves a coarse, medium, fine approach using a convex hammer. Starting off by hammering the plate in the problem area(s) on a nice solid hardwood benchtop (coarse), then on an avil (medium), then back to the benchtop for final adjustments (fine). The idea is to relieve tension in the areas of the plate that are convex. In order to do this, you have to compress the grain in the same area on both sides of the plate to stiffen it and this will eventually straighten out your saw plate.
