LOV has a picturesque and rustic charm , a welcoming, comfortable atmosphere and the camaraderie of it's guests. Many refer to it as their home away from home. Lov offers fun for the whole family with all inclusive packages for room and board making it a restful retreat from everyday life. We are handicap accesible and have a handicap room available.

Land of the Vikings is located near the town of Sherman in northeastern Pennsylvania on 150 acres of sportman's paradise bordered on 3 sides by 5,000 acres of state game land. LOV has been the site of Sons of Norway lodge events, rosemaling and woodcarving classes, annual youth camps, family reunions, weddings, Ski for Light retreats, hunting and fishing parties, holiday parties, cross country skiing and snowmobiling.

It is truly wonderful to hear all the accounts of special memories and sentiments that people will miss LOV. On the other side it saddens me to think that if each person on here stating how disappointed, sad, or angry they are about it closing, had just booked some weekends during the year to participate in the events we worked so hard to coordinate, then we probably wouldn't be closing right now. Filling the rooms was the only way stay open, we weren't looking to make money, but to sustain LOV so it could continue.

Bottom line...yes it is horrible that we will no longer have LOV as our second home and happy place...but coming up and supporting Land of the Vikings events was the most direct way to help save it. Making a token visit once a year just wasn't enough.

Please continue to share your wonderful memories and photos to keep LOV's spirit alive.

It is with deep sadness that I inform you that Land of Vikings, despite all our efforts, will be closing permanently and immediately. You may direct any questions or concerns to the Sons of Norway Third District Board. Thank you to all of you who have supported us through the up hill battle and we will always hold the memories of LOV dear to our hearts.

All events at LOV that were scheduled for April have been postponed or cancelled. Also the John Karlsen Golf Tournament and Kuub Weekend in May has been cancelled.

We sincerely hope that everyone is staying healthy during this scary and uneasy time. Remember to stay home and follow the advice that's being given. To all health professionals and first responders, we thank you!

Land of the Vikings also known as LOV

Or maybe a perfect day for this soup....

Creamy Norwegian Cod Soup (Torskesuppe)
Serves 4

1 tablespoon oil
1 medium onion, finely chopped
1 garlic clove, minced
2 cups (480 ml) fish stock
2 medium carrots, peeled into strips (with a vegetable peeler)
¾ cup (180 ml) heavy cream
¾ cup (180 ml) crème fraîche
1 ½ teaspoons salt, plus more to taste
1 pound (450 g) boneless cod filet, cut into bite-size pieces
Coarsely ground pepper, to taste
Fresh dill, to garnish
In a large, heavy-bottomed pot heat the oil over medium-high heat. Add the onion and cook, stirring occasionally, for 8 minutes or until soft and translucent. Add the garlic and cook 1 minute longer.

Pour in the fish stock and bring to a boil. Lower the heat slightly and reduce to a simmer. Add in the carrot strips and cook for 5 minutes.

Stir in the heavy cream, crème fraîche, and 1 ½ teaspoons salt. Add the cod pieces and cook for 3 to 5 minutes or until the cod is cooked through.

Remove from the heat. Taste and season with coarsely ground pepper and more salt, if desired. Top with fresh dill (the easiest way is to use a pair of scissors to trim off the tops of the dill fronds/leaves) and serve immediately.

It's great day for baking...try this recipe....

Potato Tarts with Spiced Stewed Apples (potet-terte)
(Makes about 5 three-layered tarts)

For the puff pastry:

150 g starchy potatoes (about 1-2 small)
150 g (2/3 cup) lightly salted butter, softened
150 g (1 ¼ cup) all-purpose flour
For the spiced stewed apples:

8 small, firm and tart apples diced, skins on (about 5 cups)
1/2 cup (100 g) sugar
1⁄3 cup plus 1 tablespoon (100 ml) water
1 teaspoon cardamom
½ teasooon cinnamon
¼ teaspoon ground cloves
1/8 teaspoon salt
1 tablespoon freshly squeezed lemon juice
To serve:

whipped cream
confectioners sugar
Boil the potatoes with the skins on for about 10-15 minutes, until tender and easily pieced with a knife. Drain. When slightly cooled, peel and discard the skins. Run the potatoes through a potato ricer or mash well to ensure there are no lumps. Place in a kitchen stand with the dough attachment or a bowl and add in the softened butter and flour. If using a kitchen stand, combine on medium speed or, if using a bowl, blend with a wooden spoon or your hands. Place in the refrigerator to cool while preparing the stewed spiced apples.

In a medium, heavy saucepan, combine the apples, sugar, water, spices, and lemon juice over medium heat and bring to a gentle simmer. Continue simmering for 5 minutes or until the apples are soft. Remove from the heat then stir and mash the mixture slightly, leaving chunkier pieces. Set aside to cool.

Take the dough from the refrigerator and roll it out into a thickness of about 1 cm (10 mm). Cut small rounds with a pastry cutter or bowl. For this recipe, I used a 3-inch (8cm) pastry cut to get approximately 15 rounds. Place the rounds on prepared baking sheet (I use baking paper or parchment paper on top of my sheet). Poke each round with a fork a couple of times to prevent the dough from puffing up too much.

Bake in the oven at 400°F / 200°C for 25-30 minutes, until golden brown. Let cool, 10 minutes.

To layer, place one potato cake down and top with some of the spiced stewed apples. Add another cake and top with more apples and then finish with a final potato cake. Top with whipped cream and confectioners sugar. Serve warm.

It’s taken me a couple days but here are the pictures of Oktoberfest... I think everyone enjoyed themselves and certainly didn’t go hungry. Between the dinners, desserts and the amazing Pig Roasted by Rick and Billy!!! Such a great group of guests that made it so fun and special!
