Fun day on some smooth seas with the Willson family !! Stacked the maks , then pulled on some Goliath and snappers . Big smiles and many memories made aboard the Papa Jack 4 🤙🤙

Chilly day out on the patches with Fred and Leanne !!! We were able to put a few nice mutton’s in the box . Then heavy winds moved us inside where we landed this 31.5 inch slob of snook. Another beautiful day aboard the Papa Jack 4 !

Hook and cook dinner we put together for Dean and Chris !!

Black fin tuna burgers with spicy aioli crispy wantons on kings Hawaiian buns

Yellow tail ceviche with aji panca and Micro cilantro (Matecumbe Microgreens).

Pan roasted mutton snapper with bacon &
potato hash ,keys pink shrimp pan sauce and julienne vegetables .

We fished hard and then got enjoy our fresh catch . This is what we are all about !!

The rest of their catch will be packed and shipped to be shared with their friends and family 🤙

Day 3 with Dean and Chris didn’t disappoint!! Decided to give the patch reef muttons a break and made the run to gulf to get in to the Spanish mackerel bite.
Loads of action aboard the papa Jack 4 !

Absolutely monster day fishing the gulf with my man Ryan . Spanish mackerel , plus sized mangroves kept us busy , and even had a Cobia hooked up! Epic memories made aboard the papa Jack 4 !

Second day with man dean and Chris . It was a grind to get bait , rained pretty much all day but we came back with some great fish and new memories that will last a life time !!

An absolute blast of a day with great friends on a R n D fun trip !!! Mackerels and flags kept us busy with a few other great eaters in between . Everyone will be eating very well that’s for sure 🤙

Good eats and good times with long time client and friends ! Pulled on a bunch kept a few for dinner . Best part is the last keeper flounder I caught in the keys was three years ago on our first charter together ! Great work team!

These boys from Wisconsin got it done aboard the Papa Jack 4 ! It was a bit chilly for us locals but a summer day for these boys 😂. We boated everything from mutton’s , red grouper , Goliath grouper and more .Put a nice mixed bag of good eats in the box . Solid trip 🤙

Furikake , spicy yuzu sauce , smoked shoyu rice cracker

Grilled roasted garlic croutons , , Parmesan cracker

Surf and turf
Grilled petite filet , Florida keys lobster cake potato purée , charred cherry tomatoes, hericot vert , mushroom jus , ber blanc

These two local fish are often underrated but in my opinion are some the best and most versatile table fare in the Keys. Which do you prefer , yellow Jack or rainbow runner ?

A few dishes from our latest Private chef experience .

Thanks again to for the beautiful micros , and for the amazing seafood !

-Stone crab and Mango salad with key lime and stone ground mustard sauce , micro cilantro

-House made Pate’ with local honey maldon salt , and amaranth

-Ceviche mixto, with octopus , pink shrimp , calamari , yellowtail snapper , citrus marinade , and aji amarillo

-Surf and turf , prime filet , keys lobster cake, grilled asparagus , truffle purple grits , red wine jus, lemon butter sauce , pea shoots
