Coffees from Ethiopia always make a yearly appearance on our menu, dating back to our very first coffee we offered in November 2015.

A first for us, however, is that our newest bean comes from the famed Guji zone. We’ve tasted so many coffees from Guji through our other roaster friends over the years that we’ve loved, and we were determined not to let another year pass before sharing one with you.

A seedling nursery in Bahia, Brazil, working with the “Made in Brazil” Catuaí variety. Tracing its roots all the way back to 1949, this is the dominant variety, and often, the only variety, some Brazilian farmers work with.

In the case of our current Brazil offer from Amarildo Corsi, this was the only variety on offer, even though we tasted four different processing protocols to make our selection. It was a fun exercise to see just how much flavor can change, even with the same raw material.

When you , you’re enjoying the results of a small team of dedicated coffeeheads who nerd out about flavor, origins, fermentation protocols, brewing methods and roast curves.

We know there’s a lot of chatter out there about “optimization”. We know there are “easier” ways to get coffee. We know our menu may look small. But that’s ok.

When you , whether by visiting our webstore or getting it from your favorite local coffee shop; you’re collaborating with a small team of people that offer passionate curation and ex*****on from start to finish, without parallel. Sometimes I say it in jest, but if you’re not cupping, you’re not roasting!

Why’s that? It’s as if a chef never dipped a spoon in their sauce. It’s as if the bartender never dipped a straw in their service drinks. It’s our best chance to check our work and make sure everything tastes as planned!

You can be sure that when our coffee makes it to its destination, whether that’s your kitchen counter or one of our many café partners, that the coffee has passed a lot of check points to ensure it’s the product we want you to experience. Enjoy!
