Chavrat (Chevy) DuBose was born and raised in Cambodia until the age of 24. The only foods that she had known was that of the Cambodian/Asian culture. Her mother (who learned from her mother) taught her to cook the traditional dishes that she grew up with. Once there, she found a relatively larger population of Cambodians than she had expected. They helped make her transition easier. She found how

ever, as one would expect, the exposure and access to Cambodian dishes and ingredients were not as vast as back home. But she always found a way via personal connections to find those bits of her culture that she longed for. When my wife and I moved to the Waco, Texas area in July of 2015, her connections to the Cambodian culture were diminished as the Cambodian population was much less here than in Seattle. Through friends that she met along the way, Chevy learned of markets that she could find ingredients like those found in Cambodia. We found ourselves traveling to either Dallas or Austin often. Chevy wanted to share with her Waco friends the types of foods that she grew up with. This led to many requests to make more dishes. Eventually her friends talked her into sharing her cooking on a larger scale, stating that her creations are incredible. β€œLet’s start a food truck” we said, sounds easy enough right. Well after a LOT of work to get started, we are making it happen. We have one of the only mobile food trailers in the area that sells Cambodian dishes. Located in beautiful downtown Waco, it gives us exposure to a lot of remarkable people and a scenic backdrop along the Brazos River that is simply amazing. If you are ready to try something new and exotic, come see us. We would love to share not only the food but stories and experiences.

While half of The Blasian Asian team is manning the Union Hall location, the other half is currently focused on being a donating participant during the Youth Connection Waco's annual event, "Down On The Bayou" in McGregor. Patrons feasted on authentic Cajun and other mixed cuisines while dancing the night away while enjoying the opportunity to bid on many great auction. This was our second year donating and we had a blast!

Youth Connection has been helping Central Texas youth reach their goals for 35 years with a mission, "to facilitate the development of self-worth, educational attainment and positive life choices in youth from all walks of life to enable them to lead their lives to the fullest potential".

Today Chevy and I decided to step out to get something different for lunch. We stumbled across this BBQ spot named Red Wagon BBQ. Talking to one of the owners (Michael), we found out that they have only been in this building for about 6 month or so. Just like us, they had a food truck first. Let me tell you, the brisket, sausage, and turkey was delicious (as we're the sides). If you get an opportunity, go check'em out. We can all make it when, LOCAL BUSINESSES SUPPORT LOCAL BUSINESSES!

Tonight, The Blasian Asian family took a break from the hustle and bustle and hung out at Spare Time in Temple. Everyone seemed to have a good time. We even had a first time bowler tonight that apparently is going Pro now.

Wow, what an eclipse experience! The Blasian Asian had the opportunity to cater in the VIP section at Baylor Stadium for the 2024 solar eclipse. YES, it was a lot of work getting ready and setting up but well worth it. We met many people whom traveled from all over the United States to partake in this event. Much appreciation to the City of Waco for putting in work to make this a success.
FYI, the eclipse pics were taken by me on my S23 Android (a little plug here) lol.

Our Story

Chavrat (Chevy) DuBose born and raised in Cambodia, moved to Seattle, Washington in 1997 where she lived for 18 years. A job promotion for her husband Mike relocated the family to Waco, Texas in 2015. Once here, Chevy found it difficult to find Cambodian food in Waco. She found herself traveling to either the Austin or Dallas areas to pick up items from various Asian markets which she used to create traditional Cambodian dishes. One by one, Chevy began sharing and cooking for some of her friends. These friends highly encouraged her to share her dishes on a larger scale, i.e. a food trailer or restaurant.

October 2016, Mike and Chevy on an impulse decided, why not buy a small food trailer and see what happens. That first week of December Chevy, Mike, and son Aaron debuted some of Chevy’s favorite Cambodian dishes as The Blasian Asian in Waco, TX. Although she had many dishes that she wanted to share with the folks in Waco, the small food trailer presented challenges in what she could produce. As the popularity of her food quickly grew, it became obvious that the need for a larger trailer was a necessity. So, in August of 2017, The Blasian Asian moved to a larger trailer that accommodated more of what Chevy needed for a larger menu selection. This also simultaneously created the ability to keep up with a much larger demand than what was first expected.
