For lunch today, I perfected the zucchini fettuccine alfredo I'll be teaching at Celebrity Kitchens on Saturday - yum! It's a HANDS-ON demo from 11am-1pm, and we'll also make pesto kale chips, creamy tomato soup and guilt-free chocolate mousse! What a beautiful day for a slice of veggie Pizza! Fresh Thymes is serving up my Farm Fresh Veggie Pizza...a flax and veggie crust loaded with chive-garlic cashew cheese, red Swiss chard, asparagus, zingy pepperoni-marinated radishes, topped with a little pesto drizzle. Yum!

Just picked up the first CSA share of the season: kale (my favorite!), tatsoi (a Japanese spinach?), asparagus, French radishes, red scallions, and red leaf lettuce! Now I'm brainstorming about what's for din din!

Fresh Thymes is closed today, but Cinco de Mayo is a great day to get your raw food fix with fresh guacamole and pico de gallo...tequila isn't raw, but it does come from the much-loved agave plant!

Just finished assembly gorgeous Spring Veggie Pizza for Fresh Thymes today...a veggie-flax crust topped with sundried tomato-chive macadamia cheese and marinated dandelion greens, asparagus, broccolini and leeks! Topped with tangy pine nut "parmesan"...delish! Stop there for a slice...the wonderful ladies there are serving it with a mini salad for $12.

Fresh Thymes Cafe has my LIVE! burritos today for lunch AND tonight - they are open for dinner. The burrito is a carrot-cumin wrapper filled with a spicy walnut "meat," guacamole and pico de gallo, and topped with green onion cashew sour cream. Fresh Thymes and a raw vegan burrito are a great way to stay cozy on a rainy day! They have plenty of tasty non-veg options, too!

Tomorrow at Fresh Thymes...thick and chunky raw, vegan chili with cashew sour cream. Yum! Gave a little to the hubby for dinner, and he said "It's chili-esque, but light at the same time!" And then he licked the bowl...I'll take that as a compliment. A satisfying yet refreshing bowl can be yours, tomorrow between 10 and 2 at Fresh Thymes...
