My favorite food hack at Walt Disney World is the beignet burger at Port Orleans Resort - French Quarter. My husband made us low carb breaded chicken cutlets again for dinner last night, and we have a new tip to share. He used a one to one mixture of almond flour and Pecorino Romano for the breading. We season the breading with sea salt, coarse ground black pepper, and garlic powder. He pounded the chicken, dipped it in egg with a little bit of water added, breaded it, then we refrigerated the chicken for about 30 minutes before sautéing it in olive oil. Refrigerating the chicken is a great way to get the breading to stick while sautéing the chicken. I had leftovers for lunch and dinner tonight. The chicken is great served on top of a salad. My husband said he was bored and wanted to cook. The end result was a double recipe of protein pancakes made with almond flour and ricotta. Yesterday was the first day of the EPCOT International Festival of the Arts, which runs through February 24th. It is my favorite festival, because I love Disney art and I enjoy the cooler temperatures at this time of year. My husband and I had dinner tonight at Wailulu Bar & Grill at the new Island Tower at Disney's Polynesian Resort. The sweet potato hummus with tostones and the chocolate cake are always amazing. The short rib loco moco was good too and my husband liked his Dole Whip sundae. We waited about 5 minutes for a table right around 5:00. They currently do not accept reservations.

Do you ever make breakfast for dinner? My husband and I used to make pancakes for dinner occasionally before we had kids, but our daughters have always resisted the idea of eating breakfast foods for dinner. This weekend, we made Mickey waffles with Trader Joe’s gluten free pumpkin pancake mix. They are so good!

Last night, we had dinner at Rosa Mexicano at the Disney Dolphin with family. Their tableside guacamole with grilled pineapple pico de gallo is my favorite guacamole at Walt Disney World. We also had black bean & cheese empanadas and pork carnitas tacos.

My husband and I had dinner tonight at Wailulu Bar & Grill at the new Island Tower at Disney's Polynesian Resort. The sweet potato hummus with tostones and the chocolate cake are incredible. The garlic shrimp were good, but I would probably not order them again. The next time we stop in, I am definitely trying the short rib loco moco. We waited about 5 minutes for a table at 5:00. My husband made us breaded chicken cutlets for dinner last night. I asked him to make them low carb, so he used a mixture of almond flour and Pecorino Romano for the breading. We season the breading mixture with sea salt, coarse ground black pepper, and garlic powder. He pounded the chicken, dipped it in egg with a little bit of water added, breaded it, then let it sit for 5 minutes before sautéing the chicken in olive oil. It was so good!

The desserts I had on the Disney Treasure deserve their own post. Some dessert tips I give to clients:
✨ In the main dining rooms on the Wish and Treasure, look at desserts on the allergy menus (all items are GF) and the regular menus (GF options are noted)
✨ Ask for gluten free cones at Sweet Minnie’s Ice Cream (Wish and Treasure) and Eye Scream (Magic, Wonder, Dream, Fantasy)
✨ I ask for regular vanilla ice cream instead of the vanilla frozen dessert (dairy free ice cream) when I order off the allergy menus. I can eat dairy and the dairy free ice cream is too sweet for me.
✨ Preorder multiple desserts. Some nights, I just ordered one dessert, but other nights, I chose two or three, which I never regretted, because some I liked way better than others.
✨ If you try to avoid artificial sugars like I do, make sure to let your serving team know that you do not want any NSA (no sugar added) desserts.
✨ Sometimes I pre-order desserts from other main dining rooms if nothing interests me in our assigned restaurant.
✨ Mickey ice cream bars are available in the main dining rooms if you ask for them

We had dinner last night at Palo Steakhouse, an adults only restaurant on the Disney Treasure. The highlights were my chocolate soufflé, pizza bread, and the fried calamari. I also enjoyed my Tuscan white bean soup and the burrata caprese, which I ate on my pizza bread. We had a great experience in the private dining room with our server, and it was definitely the best meal of our cruise. I offer complimentary dining consultations to all my cruise clients, and I will teach you how to get options like the fried calamari at Palo, which the manager told me was not possible when I met with him the night before our reservation.

We had lunch today on Castaway Cay, Disney’s private island in the Bahamas. They are now using Schar buns, which are so good. I also liked my corn salad, but the carrot cake was too dry and not worth eating.
