This fall, my husband and I have been having spaghetti squash dinners. On Monday, we roasted spaghetti squash halves face down on a parchment lined baking sheet for 30 minutes in a 400 degree oven. I then added butter and baked them face up for another 5 minutes. Before roasting, I removed the seeds, poked the squash all over on the inside with a fork, then added olive oil, minced garlic, sea salt, black pepper, and red pepper flakes. We topped our spaghetti squash with shaved Parmesan and peas. What are your favorite ways to prepare and serve spaghetti squash?
