For dinner, I had a double order of cucumber avocado rolls with lots of ginger from Charm Thai & Sushi, which is right behind the Magic Kingdom. They recognized my husband right away and remembered my order. 😂

I had such a great meal with my GF friends at Le Creperia de Paris in the France Pavilion at EPCOT last week, I decided to book it for Valentine’s Day dinner with my husband. They now have a separate space for cooking gluten free galettes, which are made with buckwheat.

We had dinner again tonight at Wailulu Bar & Grill at Disney’s Polynesian Village Resort. This time, we took my parents. We had no trouble walking up around 5:00 and getting a table right away. We parked at the Magic Kingdom and walked over. They currently do not accept reservations.

We are loving the organic sweet potato fries and sweet potato croutons available at Sprouts. We made the sweet potato croutons tonight and added Primal Palate adobo seasoning. I will put a link in the comments. It is a great seasoning for sweet potatoes.

Today is National Plan for Vacation Day! I reached out to the vendor I used to plan my 2025 Gluten Free Ireland trip earlier today to let them know that I am looking to plan a GF group trip to England and Scotland next summer. All of these food photos are from our recent trips to London. It is one of my favorite cities in the world for gluten free dining. If you are interested in joining me next summer, the trip will be before or after my Viking Homelands cruise from June 27th to July 11th. If you are interested in joining me, comment below if you would prefer a June or July trip.

We celebrated my dad’s birthday last night at the Grand Floridian Cafe. We love their miso glazed salmon and the heirloom apple salad. I do not like that they heat their Bloomfield Farms rolls in plastic bags.

My daughters, who are home from college this weekend, made us a Dutch Baby Pancake for breakfast this morning. This recipe works best with Josie’s Best Muffin & More Mix, which we were out of, so we used Bob’s Red Mill 1 to 1 Baking Flour. The pancake did did not rise as much, but it still tasted great. What did you have for breakfast?

Dutch Baby Pancake

Preheat oven to 400 degrees
When the oven is preheated to 250, put a stainless steel skillet in the oven with 4T of unsalted butter.
Whisk 6 large eggs in an 8 C Pyrex measuring cup until slightly frothy.
Whisk in 1 C milk (we use 2% milk) and 1/4 tsp sea salt.
Slowly whisk in 1 C (144 g) Josie’s Best Muffin & More Mix (this mix is an all-purpose GF flour mix)
Pour the batter in the pan when the oven is fully preheated and the butter is just beginning to brown. Cook for 15 minutes.
Serve with lemon and powdered sugar.

My snack today was Hu chocolate covered cashews. They are certified gluten free but are made on shared equipment after an allergy clean, which Hu is transparent about on their packaging. Companies are not required to disclose that their food is made on shared lines on packaging, and many do not.

My favorite food hack at Walt Disney World is the beignet burger at Port Orleans Resort - French Quarter. My husband made us low carb breaded chicken cutlets again for dinner last night, and we have a new tip to share. He used a one to one mixture of almond flour and Pecorino Romano for the breading. We season the breading with sea salt, coarse ground black pepper, and garlic powder. He pounded the chicken, dipped it in egg with a little bit of water added, breaded it, then we refrigerated the chicken for about 30 minutes before sautéing it in olive oil. Refrigerating the chicken is a great way to get the breading to stick while sautéing the chicken. I had leftovers for lunch and dinner tonight. The chicken is great served on top of a salad. My husband said he was bored and wanted to cook. The end result was a double recipe of protein pancakes made with almond flour and ricotta. I have been looking for high protein and lower carb breakfast ideas. I thought they were good, and look forward to seeing how they do when frozen. I will put a link to the recipe in the comments.

Yesterday was the first day of the EPCOT International Festival of the Arts, which runs through February 24th. It is my favorite festival, because I love Disney art and I enjoy the cooler temperatures at this time of year. My friend Gina from Gluten Free Disney World puts together guides for all the EPCOT festivals. I will put a link in the comments.

My husband and I had dinner tonight at Wailulu Bar & Grill at the new Island Tower at Disney's Polynesian Resort. The sweet potato hummus with tostones and the chocolate cake are always amazing. The short rib loco moco was good too and my husband liked his Dole Whip sundae. We waited about 5 minutes for a table right around 5:00. They currently do not accept reservations.
